Steps:
- Place one flour tortilla on a baking sheet or pan. Place 2 tablespoon's of pizza sauce or spagetti sauce (bertolli is great) on tortilla and spread evenly over surface of tortilla.
- Place 4-6 pepperoni slices on top of sauce, then sprinkle with parmesean cheese.
- Take one slice of provolone cheese and tear it into four equally sized pieces. Place the four pieces on top of tortilla surface.
- Sprinkle mozzerella cheese (not very much) over all ingrediants.
- Place 4-6 more pepperoni slices over mozzerella, then sprinkle minced garlic over the mozzerella.
- Put second flour tortilla over top of your now tortilla pizza. Place one more whole slice of provolone directly in middle of toritlla, put just sprinkle of mozzerella cheese, then some crushed red pepper.
- Place in oven (set for 450 degrees) and wait about 10 minutes.
- Check on your quesidilla and see if it is done (the tortillas need to be a little brown on the outside to give it a crust like texture). If its done take it out.
- Cut into four triangles, and enjoy!
GLUTEN FREE PEPPERONI PIZZA QUESADILLA
In my quest for gluten-free, yeast-free pizza, I'm always trying different things to get that pizza taste that I crave but can't have. One day a few months ago I was really craving pizza while I was at the grocery store, so I bought some pizza sauce, turkey pepperoni and mozarella cheese and this is what I came up with. - Preheat oven to 350 degrees.
- Lay 2 tortillas side by side on a greased cookie sheet.
- Mix shredded cheddar and monterey jack and cover tortillas. Then place the other two tortillas on top.
- Spread tomato sauce on.( I recommend Ragu Chunky Mushroom spaghetti sauce).
- Cover with mozzerella and toppings.

- These are made just like any other quesadilla or grilled cheese sandwich.
- Spray the bottom of a non-stick skillet with cooking spray and preheat.
- When the pan is fairly hot place 1 Flour Tortilla in the pan.
- Fairly quickly (because you want to get everything on before the bottom starts to brown) spread on a few tablespoons of sauce.
- Then add a layer of Pepperoni (and anything else you like).
- Then top with shredded cheese.
- Top it off with the 2nd Flour Tortilla.
- Just like any other quesadilla or grilled cheese let it brown then flip it over. If all of the cooking spray was absorbed you can spray on a little more, but you usually don't need to.
- After both sides are browned and the insides are hot and melted take the "pizzas" out to cool.
- Once cooled slice in 1/4 like a pizza and wrap snugly with plastic wrap or aluminum foil.

- My son is not super picky so I made these in batches and freeze and then take them out the morning of school and pop into his lunchbox. It is usually thawed and yummy by lunch time. If you freeze them you need to let the cool completely first the wrap them separately in plastic wrap and then aluminum foil to prevent ice crystals from forming.
