Tips:

  • Choose the right salmon. Look for wild-caught salmon if possible, as it is typically lower in contaminants and has a better flavor than farmed salmon.
  • Cook the salmon gently. Poaching is a great way to cook salmon because it keeps the fish moist and tender. Avoid overcooking the salmon, as this will make it dry and tough.
  • Use a flavorful poaching liquid. The poaching liquid is what will give the salmon its flavor, so make sure to use a flavorful liquid. Some good options include:
    • Court-bouillon: A classic French poaching liquid made with white wine, vegetables, and herbs.
    • Milk: Milk poaching liquid results in a rich, creamy sauce that is perfect for serving with salmon.
    • Butter: Butter poaching liquid adds a rich, buttery flavor to the salmon.
  • Season the salmon before poaching. Seasoning the salmon before poaching will help to enhance its flavor. Some good options for seasonings include:
    • Salt and pepper
    • Lemon juice
    • Fresh herbs, such as dill, parsley, or thyme
    • Garlic powder
    • Onion powder
  • Serve the salmon immediately. Poached salmon is best served immediately after it is cooked. You can serve it with a variety of sides, such as:
    • Roasted vegetables
    • Mashed potatoes
    • Rice
    • Quinoa
    • A simple green salad
