Poffertjes are a type of Dutch pancake that is typically served with butter and powdered sugar. They are made from a batter that is similar to pancake batter, but with the addition of yeast. This gives the poffertjes a light and fluffy texture. Poffertjes are cooked in a special pan that has small indentations, which gives them their characteristic shape. They can be made with a variety of different toppings, such as fruit, syrup, or whipped cream. Poffertjes are a popular breakfast or brunch food, but they can also be enjoyed as a snack or dessert. If you are looking for a delicious and unique treat, then you should definitely try making poffertjes.

POFFERTJES (DUTCH MINI PANCAKES)

Poffertjes (Dutch Mini Pancakes) image

An easy, no-yeast recipe for Dutch pancakes, which are called "poffertjes" in the Netherlands. They are traditionally made in a poffertjes pan which has indents, but you can use a large frying pan and scoop a small tablespoon of batter per poffertje into the pan. Serve the poffertjes warm with a knob of butter and powdered sugar.

AEBLESKIVER POFFERTJES

Aebleskiver Poffertjes image

Danish-Dutch fusion cuisine. The recipe for the batter is typically Dutch (yeast raised) but the filling of jam is quite Danish. Try Cherry-Strawberry Preserves for the Bread Machine ABM (http://www.recipezaar.com/311376) for the filling. I use an aebleskiver pan, which has larger indentations than a poffertjes pan. The batter recipe is adapted from Let's Go Dutch by Johanna van der Zeijst Bates.

POFFERTJES (TINY PANCAKES)

Poffertjes (Tiny Pancakes) image

Poffertjes are traditional Dutch cakes, a bit similar in texture to American pancakes. Poffertjes are cooked in a special cast-iron pan with several small shallow indentations in the bottom. They are usually served as an afternoon snack, not as a breakfast food, and often served with icing sugar. I'm posting this in honour of the Aussie/Kiwi World Tour as we are visiting Europe and didn't see this on Zaar. I haven't tried this yet but am going to go and buy the special pan in the Cleveland Market tomorrow and will try them out. Found the recipe on "Back to your roots".

Steps:

  • In a small bowl, dissolve the yeast in the milk. In a separate bowl, combine the buckwheat flour, flour, eggs, yeast, sugar, salt and half the milk. Whisk smooth. Now add the remaining milk and beat again. Cover the bowl with plastic wrap and allow to rest for an hour.
  • Melt butter in a frying pan. When it sizzles, add teaspoonfuls of the batter in circular movements to create the mini pancakes. Turn the poffertjes around as soon as the bottom has set, using two forks.
  • Serve Pancake Puffs with the best quality butter you can find and sieved powdered (icing) sugar.

DUTCH OLD-FASHIONED POFFERTJES (MADE WITH YEAST)

Dutch Old-Fashioned Poffertjes (Made with Yeast) image

This recipe is an old Dutch recipe. It is originally in metric measures (see footnote for metric measures) that are converted here. To bake poffertjes, you need a special poffertjes pan. I have used a blinis' pan, others have used a Danish "aebleskiver"pan or a "donutfactory". Serve with butter and powdered sugar.

Time 1h10m

Yield 4

Number Of Ingredients 7

¾ ounce fresh yeast, crumbled
1 cup milk, divided
1 cup all-purpose flour
1 cup buckwheat flour
1 cup water
1 large egg
¼ cup salted butter, melted

Steps:

  • Combine yeast with 3 table spoons of luke warm milk in a bowl and allow to dissolve, about 5 minutes.
  • Combine flour and buckwheat flour in a bowl. Add yeast mixture, remaining milk, and water; stir to combine. The batter has to be slightly thick. Stir in melted butter and egg. The batter needs to be luke warm. Cover bowl and set aside in a warm place to rise for about 30 minutes.
  • Heat poffertjes pan and put some oil or butter in there to make sure the poffertjes don't stick to the pan. Put a little batter into each hole. When the top side of the poffertjes are almost dry, turn the poffertjes over to bake the other side. The poffertjes need to be light brown on each side.

Tips:

  • Use a well-seasoned poffertjes pan. This will help the poffertjes cook evenly and prevent them from sticking.
  • Heat the pan over medium-low heat. If the pan is too hot, the poffertjes will cook too quickly and burn.
  • Pour the batter into the pan in small circles. Each poffertje should be about 1-inch in diameter.
  • Cook the poffertjes for 2-3 minutes per side, or until they are golden brown. Flip them carefully with a spatula.
  • Serve the poffertjes warm with your favorite toppings. Some popular toppings include butter, syrup, powdered sugar, and fruit.

Conclusion:

Poffertjes are a delightful Dutch treat that can be enjoyed for breakfast, lunch, or dessert. They are easy to make and can be customized with a variety of toppings. With the right pan and a little practice, you can easily make delicious poffertjes at home.
