1 tablespoon minced fresh ginger root

Steps:

2 cups all-purpose flour, or more as needed
¾ cup warm water
½ teaspoon kosher salt
2 pounds ground pork
8 cloves garlic, minced
2 tablespoons grated fresh ginger
⅔ cup thinly sliced green onions
½ cup thinly sliced chives
4 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 teaspoons gochugaru (Korean red pepper flakes)
2 tablespoons soy sauce
2 teaspoons sesame oil
⅓ cup seasoned rice vinegar
3 tablespoons soy sauce, or to taste

Steps:

1 boneless rolled pork loin roast (about 3-1/2 pounds)
BREAD DUMPLINGS:
8 day-old hard rolls, torn into small pieces
1-1/4 cups warm milk
1 cup plus 3 tablespoons all-purpose flour, divided
4 eggs, lightly beaten
3 quarts water
1 can (14-1/2 ounces) beef broth
6 tablespoons cold water

Steps:

  • Combine the salt, garlic powder and pepper; rub over roast. Place roast fat side up on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 1-1/2 to 1-3/4 hours or until a thermometer reads 160°., Meanwhile, in a large bowl, combine rolls and milk. FOR THE DIPPING SAUCE:
1/2 cup soy sauce
1 teaspoon sambal or garlic-chile sauce
1 tablespoon rice wine vinegar

  • 1 In a mixing bowl, combine the pork, scallions, ginger, garlic, soy sauce, mirin, sesame oil and lemongrass. Mix without overworking the meat. 2 Prepare your work station. 3 garlic cloves, crushed
thumb-sized piece of ginger, peeled and grated
4 tsp lemongrass paste
1 lime zested and juiced, plus extra wedges to serve (optional)
1 red chilli, deseeded and finely sliced
2 tsp olive oil
2 medium carrots, coarsely grated
8 spring onions, finely sliced
500g pork mince
200g swiss chard, finely sliced
2 tsp fish sauce
½ small bunch of coriander, roughly chopped

  • Prepare the vermicelli noodles following pack instructions, then set aside. Meanwhile, mix together the garlic, ginger, lemongrass, lime zest and chilli. 1/3 cup soy sauce
1/3 cup rice vinegar
1 teaspoon red pepper flakes

Steps:

1/2 medium green cabbage, roughly chopped
salt
1/2 teaspoon grated ginger
1 large clove garlic, finely chopped
1/2 cup finely chopped scallions
1/2 cup chopped garlic chives (optional)
3 ounces peeled shrimp, deveined and chopped
1/2 pound ground pork
1/4 cup soy sauce
1/2 teaspoon toasted sesame oil
Freshly ground black pepper
1 package dumpling wrappers
2 tablespoons vegetable oil
1/4 cup soy sauce
3 tablespoons rice vinegar
1 teaspoon thinly sliced scallion white
1 pinch toasted sesame seeds

Steps:

  • The filling: Place the cabbage in a food processor, add 1/2 teaspoon salt, and pulse until finely chopped but not puréed. Wrap the chopped cabbage in a clean kitchen towel and squeeze to remove juices, then transfer to a large bowl. Add ginger, garlic, scallions, and, if desired, garlic chives. Reduce the heat to medium-high and cook until all water is evaporated and the bottoms are browned and crispy, about 10 minutes. Alternatively, the dumplings can be steamed until cooked through, about 5 minutes in a steam basket.
  • Transfer the dumplings to a plate and serve with a dipping sauce.
