1 (3 1/2) pound boneless pork shoulder roast, cut into 5 or 6 pieces
salt to taste
1 tablespoon ground black pepper
3 tablespoons olive oil, divided, or more as needed
1 large sweet onion, chopped
1 large Anaheim chile pepper, chopped
2 cloves garlic, chopped, or more to taste
2 (15 ounce) cans chicken broth
12 large whole Anaheim chile peppers
1 (15 ounce) can green enchilada sauce
¾ cup chopped fresh cilantro
1 tablespoon ground cumin
1 tablespoon chili powder

Steps:

  • Season pork with salt and pepper. Heat 1 tablespoon oil in a large frying pan over medium-high heat. Brown pork pieces in the hot oil, about 5 minutes. Place pork into the bottom of a slow cooker.
  • Heat 1 tablespoon oil in the same pan over medium-high heat. Saute onion, chopped Anaheim chile, and garlic for 5 minutes, adding more oil if needed. Add mixture to the slow cooker; pour in chicken broth.
  • Cover and cook on High until pork is tender and easily shredded with a fork, about 4 hours.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Brush the whole chile peppers with oil and place on a baking sheet.
  • Broil in the preheated oven for 5 minutes per side. Remove from the oven and let cool slightly, about 5 minutes.
  • Remove pulp and seeds from chiles and cut into pieces. Place into the bowl of a food processor with enchilada sauce, cilantro, cumin, and chili powder. Puree until smooth. Refrigerate until ready to use.
  • Remove pork from the slow cooker and shred using 2 forks; return to the slow cooker. Add pureed chile pepper mixture and stir well. Cook on Low, 3 to 4 hours more.

2 teaspoons salt
1 teaspoon freshly ground black pepper
Flour for dredging
1/4 cup vegetable oil
3 yellow onions
2 green bell peppers, cut into 1-inch cubes
2 Anaheim or Poblano chiles, cut into 1-inch cubes
2-3 jalapenos, seeds removed, and finely chopped
3 garlic cloves, peeled and finely chopped
1 1/2 pounds tomatillos, roasted, peeled and chopped
1 tablespoon dried oregano
2 teaspoons ground cumin
2 tablespoons coriander seeds, crushed and soaked in a scant amount of water
2 bay leaves
1 bunch cilantro leaves, cleaned and chopped
4 cups chicken stock

Steps:

  • Season the pork meat generously with salt and pepper, lightly flour. Heat oil in a heavy-bottomed skillet over medium high heat and brown pork chunks well in small batches, on all sides. Lift pork out of pan and place in a wide soup pot. Discard fat and place the onions and peppers in the same skillet and sweat over moderate heat, stirring occasionally until limp, about 5 minutes. Add all of the chiles and cook an additional 3-4 minutes, then add the garlic and cook 1-2 minutes more.
  • Add the Sauteed vegetables, chopped tomatillos, dried herbs and cilantro to the meat, cover with the chicken stock and bring up to a boil and reduce to a slight simmer. Cook for 2-3 hours uncovered or until the pork is fork tender.
  • Adjust the seasoning to taste with salt and pepper. Serve with red rice for a delightful contrast.

  • Preheat the oven to 350 degrees F (175 degrees C).

Make it a meal: Serve with warm corn tortillas, avocado and spinach salad with honey-lime vinaigrette, and a dark beer like Negra Modelo (Mexico, $8 per six-pack). If you can find it, use dried Mexican oregano in this recipe. It has a smoky flavor that dried Mediterranean oregano doesn't have. Look for it at Latin markets.

  • Puree 2 cups chicken broth, 1/4 of tomatillos, green onions, cilantro with stems, and garlic in blender. Set salsa verde aside.
  • Brush heavy large pot with oil; heat over medium-high heat. Sprinkle pork with salt and pepper. 4 -5 lbs pork shoulder, bone in, trimmed of excess surface fat
8 medium tomatillos, husked and rinsed
1 (7 ounce) can chopped green chilies (with liquid)
4 medium garlic cloves
1 small onion, roughly chopped
2 teaspoons dried oregano
3/4 cup dark Mexican beer
1/4 cup finely chopped fresh cilantro
1 teaspoon TABASCO® brand Chipotle Pepper Sauce
kosher salt
fresh ground black pepper
2 cups white rice, steamed
1 cup sour cream
1 lime, cut into eighths

Steps:

  • Pre-heat oven to 500 degrees. In a small bowl mix the salt, chili powder, oregano, granulated garlic, and cumin. Coat the pork on all sides with the rub, massaging the spices into the meat. Let the pork sit at room temperature for 20 to 30 before browning.
  • In a food processor or blender, purée the tomatillos, canned chiles, garlic, onion, oregano, and beer.
  • Brown the roast on a roasting pan for 30 minutes in the oven.
  • Remove the pork from the oven and reduce temperature to 250 degrees. Place the pork in a 13x9-inch heavy-duty disposable drip pan. Pour the tomatillo mixture around the pork so it comes up the sides of the pork by 1 inch or so. Seal the pan tightly with foil, and place the pan in the center of the oven. Cook the pork until the internal temperature of the meat reaches 190°F and the meat is so tender that it tears easily with a fork, 2 1/2 to 3 1/2 hours.
  • When the pork is fully cooked, carefully remove the pan from the oven. Unwrap the pork (be careful of the steam) and transfer it to a cutting board. Chop the pork into 1/2-inch chunks and shreds, discarding any large pieces of fat or tough pieces of meat. Pour the pan liquid into a large saucepan and spoon off most of the surface fat. Add the shredded meat and simmer the mixture uncovered for a few minutes to blend the flavors. Season with the cilantro, Tabasco, as well as salt and pepper to taste. The chile verde may be made up to this point 1 day ahead of serving and refrigerated overnight. Warm the chile verde over a slow simmer before serving.
  • Serve the chile verde warm in bowls with steamed rice. Pass the sour cream, limes wedges, and a bottle of Tabasco.

Mild canned California green chiles season this meaty pork stew. Serve it with rice or as a burrito filling. For Burritos, spoon pork into warm, soft flour tortillas, add sour cream, tomato wedges, and a squeeze of lime juice and fold to enclose. We also serve this Chile Verde with Tamales. This chile Verde is also good served with scrambled eggs, Enjoy!

2 to 3 pound pork roast (pre-diced pork works well for a faster preparation. Just brown with onions)
2 tablespoons cooking oil or 2 tablespoons lard or 2 tablespoons bacon grease
1 large chopped onion
1 head minced garlic
6 tablespoons flour
1 (15-ounce) can tomatoes, drained
2 cups diced green chilies
3 large tomatillos, husks removed and coarsely chopped
2 to 4 teaspoons jalapeños, chopped
5 cups chicken broth
2 tablespoons ground cumin, or to taste
2 tablespoons ground chili powder
1 teaspoon salt

Steps:

  • Simmer roast in a large pan until meat is tender and removes from the bone easily. (You can also use diced pork, or pork cube steaks (cut to bite size pieces), browned in the pot with the onion and garlic before adding the rest of the ingredients). Cool meat enough to handle. Cube cooked pork into bite size pieces. Process 1/2 of the green chilies until smooth. In the same large pan, heat oil. Add onions and garlic; sauté until tender but not brown. Stir flour into the onion, garlic and fat until flour absorbs the oil or fat. Add broth. Cook and stir until mixture comes to boil and is slightly thickened. Add cubed meat, drained tomatoes, chopped tomatillos, all of the green chilies and jalapeños. Add the spices a little at a time until you get the taste you like, bringing to a simmer before each addition. Simmer for at least 1 hour, stirring occasionally to prevent it from sticking to the bottom of the pan. If you want more of a stew type chili, add cubed potatoes 20 minutes before serving; serve with warm tortillas. Serve over burritos and garnish with cheese, lettuce, tomatoes and sour cream.

2 medium baking potatoes, peeled and cut in 1-inch cubes

1 lb pork tenderloin or 1 lb stewing beef
1 tablespoon vegetable oil
8 mild green chilies, toasted, peeled and chopped (or used canned)
4 garlic cloves, crushed
2 onions, chopped
2 tomatoes, chopped
2 cups boiling water

Steps:

  • Cut pork or beef into small cubes.
  • Sauté in oil until browned.
  • Drain off fat.

2 -3 lbs pork roast (pre-diced pork works well for a faster preparation. Just brown with onions)
2 tablespoons cooking oil or 2 tablespoons lard or 2 tablespoons bacon grease
1 large chopped onion (not traditional) (optional)
1 head minced garlic (taste great, but also helps prevent heart burn)
6 tablespoons flour
1 (15 ounce) can tomatoes, drained
2 cups diced green chilies (I use Big Jims, roasted, peeled and frozen by the bushel every fall)
3 large tomatillos, husks removed and coarsely chopped (optional)
2 -4 teaspoons jalapenos (optional)
5 cups water (broth is not traditional, but I like the flavor better) or 5 cups chicken broth (broth is not traditional, but I like the flavor better)
2 tablespoons ground cumin (or to taste)
2 tablespoons ground chili powder (or to taste) (optional)
1 teaspoon salt

Steps:

  • Directions:Prep Time: 1 hr Total Time: 1/2 day 1 Simmer roast in a large pan until meat is tender and removes from the bone easily. (You can also use diced pork, or pork cube steaks (cut to bite size pieces), browned in the pot with the onion and garlic before adding the rest of the ingredients). 2 Cool meat enough to handle. 3 Cube cooked pork into bite size pieces. 4 Process 1/2 of the green chilies until smooth. 5 In the same large pan, melt the lard or bacon grease (or heat oil). 6 Add onions and garlic; sauté until tender but not brown. 7 Stir flour into the onion, garlic and fat until flour absorbs the oil or fat. 8 Add broth or water. 9 Cook and stir until mixture comes to boil and is slightly thickened. 10 Add cubed meat, drained tomatoes, chopped tomatillos, all of the green chilies and jalapeños if desired (taste first). 11 Add the spices a little at a time until you get the taste you like, bringing to a simmer before each addition. 12 Simmer for at least 1 hour (longer if you can afford the time), stirring occasionally to prevent it from sticking to the bottom of the pan. 13 If you want more of a stew type chili, add cubed potatoes 20 minutes before serving; serve with warm tortillas. 14 Serve over burritos and garnish with cheese, lettuce, tomatoes and sour cream. 15 Leave pork out for a vegetarian green chili sauce.

3 lbs boneless pork sirloin tip roast, cut into 1-inch cubes
1 large onion, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
3 bay leaves
1/3 cup vegetable oil
1 (14 1/2 ounce) can chicken broth
1 lb tomatillo, peeled
4 jalapeno peppers
3 garlic cloves
3 tablespoons masa harina (optional)

Steps:

  • Place pork, onions, salt, pepper, cumin, and bay leaves into a large braising pan; cover with water; gently simmer over medium-heat 1 1/2 hours or until pork is tender; drain liquid from pork; remove bay leaves; trim pork into 1/2" pieces.
  • NOTE: A portion of the pork may be cooled and frozen at this point, then used for making carnitas later on.
  • Wipe braising pan dry; pour in vegetable oil and heat until oil almost smokes; brown pork in oil, stirring occasionally, for approximately 15 minutes.
  • While pork is still cooking, prepare the sauce: Remove most of the membranes and most of the seeds from the jalapeno peppers; bring chicken stock to boil in medium saucepan; add tomatillos, jalapenos, and garlic cloves and boil 3 minutes; pour hot contents of saucepan into blender; puree.
  • Pour sauce over browned pork; simmer 15 minutes over low heat; thicken, if desired, with a slurry of 3 tablespoons masa harina shaken with 1/4 cup water until smooth.
  • NOTE: You may make your chile verde as spicy or as mild as you like by simply increasing or decreasing the amount of jalapeno pepper seeds and membranes included in the sauce.

1 cup all-purpose flour, seasoned with salt and pepper
5 pounds boneless pork shoulder, Cut into cubes
3 tablespoons olive oil
One yellow onion, chopped to
2-16 ounce jars salsa Verde OR one pound tomatillos, roasted, peeled, pureed
One 10 ounce can diced tomatoes with juice
8 ounces diced green chiles such as Hatch chiles
Two cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon ground cumin
2 teaspoons coriander
1 tablespoon pico de Gallo spice
One tablespoon ground new Mexico chili

Steps:

  • Spread seasoned flour in shallow bowl. Dredge pork cubes. Heat olive oil in large skillet, Cook and stir onion in hot oil until fragrant, 3 to 5 minutes. Add pork. Cook and stir until pork is browned on all sides, 5 to 7 minutes. Transfer pork and onion mixture to a slow cooker. Stir in puréed tomatillos or salsa Verde, diced tomatoes, and green chilies, garlic, oregano, cumin, and coriander. Cook on low for six hours. Serve with warm flour tortillas.

This is not a traditional Chile Verde, but it is very easy.This recipe was inspired by one I found on the back of can of enchilada sauce. In my hometown, chile verde was usually made with pork, not beef, so that's what I use. I've used cubed pork shoulder roast instead of the tenderloin, and couldn't tell the difference. You can substitute a 4oz can of diced green chiles for the mild Anaheim pepper. Or if you like things a bit hotter, use a spicier pepper.

1 tablespoon olive oil
1 medium onion, chopped

1 lb pork tenderloin, trimmed and cut into bite sized cubes
2 cups tomatillos, husks removed, washed, and coarsely chopped
2 cups chicken stock
1/2 cup green chili, roasted, peeled, seeded, and chopped
2 serrano chilies, finely chopped
2 garlic cloves, finely minced
1/4 cup red onion, diced
1 yellow bell pepper, diced
1/4 cup tequila, gold
1 tablespoon canola oil
3 tablespoons cornmeal
1 tablespoon dried ancho chile powder
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon cumin
1/4 cup scallion, sliced
1/4 cup cilantro, freshly chopped

Steps:

  • Heat Oil in a large skillet with deep edges or a soup pot over medium high heat.
  • Mix cornmeal, chili powder, cumin, some salt and pepper in a bowl. Roll in pork to coat. Shake off any excess and reserve the corn meal mixture.
  • Toss pork into pan and saute for about 5-6 minutes until browned on all sides. Remove from pan.
  • Add white onions to the pan -- season with a sprinkle of salt and pepper -- and cook for about 3-4 minutes until softened. Add peppers and garlic. Reduce heat to medium and cook for 1-2 minutes.
  • Add tomatillos, green chilis, and chicken stock. Add another sprinkle of salt and pepper if desired - I like to continually layer the seasoning. Increase heat to medium high and bring to a boil. Add reserved cornmeal mixture, and stir vigorously to avoid lumps. Reduce heat back to medium.
  • Add tequila and Pork to the pan and cook at medium for 3-5 minutes or until mixture is heated through, thickened, and flavors incorporated.
  • Serve in bowls with the fresh scallions and cilantro sprinkled on top.
  • Enjoy.

6 large tomatillos, husk removed, rinsed and cut in halves, lightly chared
2 large poblano peppers, seeded & lightly chared under the broiler on all sides
1 large sweet onion cut in half, peeled and lightly chared
1 large jalapeno seeded, cut lenghtwise in half and lightly chared, for heat leave seeds in
4 large cloves of garlic lightly chared
1/4 c diced fresh cilantro
2 1/2 lb pork loin, cut into bite sized 1/2 inch pieces
2 1/2 c pork broth if you have it or chicken broth
1/2 tsp dried mexican oregano
1/2 tsp powdered cumin
1 tsp sea salt
1/4 tsp fresh ground black pepper
1 tsp garlic powder
1/3 c olive oil
1/4 tsp sugar
1/4 c water
1/2 tsp extra seasonings salt, pepper, cumin, orgeano, garli powder

Steps:

  • 1. Start by cutting your pork loin into 1/2 inch bite sized pieces. Nest season the pork meat with salt, pepper, cumin powder, oregano, garlic powder, and the oil. Put into a large freezer bag squeeze out as much air as possible and seal. Then mush bag real well making sure to mix the meat real good with the seasonings. Put into the fridge overnight for the best flavor. If you are pressed for time leave like this for at least two hours.
  • 2. Next day remove papery husk from your tomatillos rinse under cool water removing the outer residue, cut them in half. Slice the onion in quarters, leave your poblanos whole just rinse first. Slice your jalapenos in half lengthwise remove seeds and membranes. Peel the garlic cloves. Next rub a little oil on a large cookie sheet or large baking pan put tomatillos cut side down place the onions alongside on the sheet pan. Place both the poblanos on the sheet and the cloves of garlic. Place the jalapenos cut side down as well. Place pan under the broiler and char everthing lightly about 5 minutes. When the tomatillos, and the onions start to brown lightly turn the onions only. You can remove the tomatillos as soon as the turn a little brown you do not want the tomatillos to turn real black, just a light char do the same with the garlic brown evenly on all sides do the same with the onion. Turn your jalapenos over so the inside will brown a little too. You will remove all the veggies except the poblanos as soon as the veggies turn a little brown. Keep turning the poblanos until they char black on all sides. Remove them when all charred and place in a freezer bag and seal for about 15 minutes. After 15 minutes have passed remove poblano peppers one at a time and rub so thet the charred skin comes off. Do both poblanos this way. Then remove the core and the seeds. Next place all the roasted veggies in the blender and blend along with a the fresh cilantro, and a little more salt, pepper, garlic powder, cumin powder, and the sugar. Start the blender on pulse to get started then go to blend making sure all the ingredients get well blended. You might have to do this in a few batches until all your veggies are well blended. Now set this all aside and go back to your pork meat.
  • 3. Take out the pork from the refrigerator. In a deep heavy pot add 1/2 cup oil and heat until hot start to sear your pork meat in batches make sure your sear on all sides then remove to a different pan as you finish searing the rest of the meat. When done add a little more oil wait until it heats up and add your blended veggies to the hot pan, stir real good cook for about two minutes and add the chicken broth and mix real well. Taste the sauce to see if you have it seasoned well enough. Next add the meat back into the pot; cover lower the heat to slow simmer and cook for two hours.
  • 4. After the meat has cooked for two hours take 1/4 cup cool water and add four or five tablespoons of corn starch. Make a slurry mixing well the corn starch in the water until all is disolved. Mix the slurry into the hot broth, Keep stirring until the broth has thickend and cooked for about 5 or 6 minutes. Remove from heat and serve along side my Mexican rice and refried beans. Recipes are posted. Don't forget to serve the warm tortillas with this recipe. My kids love to put a a few spoonfuls of chile verde pork meat with rice in a tortilla and roll it up and eat as a taco. either way they are delicious. To make the chile verde sauce hotter just add more jalapenos. In the recipe I only show one jalapeno some people do not like to much heat in their chile verde sauce. If you are using beef cubes sear add the sauce and slow cook for three hours. If using chicken brown chicken add the sauce and cook for about one hour and 15 minutes. Enjoy
