1 tablespoon brown sugar

  • Coat pork chops in seasoned flour.

2 Tbsp. butter, divided

3/4 cup fresh orange juice
2 tablespoons soy sauce
1 teaspoon sugar
1 garlic clove, peeled and crushed
1/4 teaspoon black pepper
8 sprigs fresh thyme
2 tablespoons butter
2 tablespoons safflower oil (I usually use vegetable or canola)
8 pork chops, 1/2 inch thick

Steps:

  • Combine orange juice with soy sauce, sugar, garlic, pepper, and thyme in a 1 gallon zipper bag. Set aside.
  • With a very sharp knife, score the pork chops 1/8 inch deep in a criss-cross pattern on each side. Add to marinade bag, seal, and let sit at least 30 minutes.
  • Remove pork chops and retain marinade.
  • Heat the butter and oil in a large heavy skillet until hot. Add the chops in a single layer and saute over high heat for 3 minutes on each side, browning them well. (You may need to do these in batches, or in two skillets. I usually do this using the grill method below.).
  • Reduce heat to low and poir reserved marinade over the chops. Cook until done, about 8-10 minutes longer. Remove chops to a heated platter. Reduce the marinade in the skillet to 1/3 cup. Pour over the cooked chops and serve immediately.
  • GRILL METHOD: Also excellent grilled! Reduce the marinade separateley in a saucepan, then pour over the chops after removing from grill.

2 large dried ancho chiles
1 cup boiling water
4 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper

2 tablespoons orange juice concentrate
1/3 cup fat free chicken broth
4 boneless center cut pork chops, trimmed

Steps:

  • To prepare marinade, begin by first toasting the chiles in a hot skillet for a minute or so until they begin to emit a peppery fragrance. Cast iron works best.
  • Remove tops from peppers and split into 2 or 3 large pieces. If you want a milder sauce, discard the seeds. Place the pieces in a cup of boiling water for 20 minutes to soften.
  • Loosely drain water and place chiles in a blender with the garlic, salt, pepper, brown sugar, orange zest, orange segments, orange juice concentrate, and broth. Blend into a pureé.
  • Place the marinade in a resealable bag or container. Add the chops and marinade in the ice box for 8 to 24 hours. Longer really is better.
  • To prepare the chops, remove chops from marinade and lightly pat dry. Reserve marinade for the sauce.
  • Heat skillet until hot but not smoking. Add a little oil to coat the pan. Cook pork chops for 1 to 2 minutes on each side to get a nice brown sear. Reduce the heat to medium and add in the resrved marinade. Cook for 15 to 20 minutes until the chops are tender.
  • Remove chops from pan and place on plate and tent to keep hot. If you would like a thicker more intensely flavored sauce, reduce heat a small amount and cook down for a few minutes.

2 pounds country-style pork ribs, or boneless steaks cut from shoulder, about 3/4 to 1 inch thick
Salt and pepper
1 1/2 cups freshly squeezed orange juice
1/4 teaspoon cayenne, or to taste
1 teaspoon ground cumin
1 shallot, minced
Vinegar or fresh lemon or lime juice, if necessary
1 teaspoon grated orange rind
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat oven to 450 degrees or heat broiler, adjusting rack so that it is about 4 inches from heat source. Put an ovenproof skillet large enough to hold pork in one layer on stove top and turn heat to high. Sprinkle meat with salt and pepper. Brown meat quickly on both sides, then transfer skillet to oven or broiler.
  • Meanwhile, combine orange juice, cayenne, cumin and shallots in a small saucepan and turn heat to medium. Cook, stirring, until it reduces to about 1/3 cup; taste and add salt as necessary, a touch more cayenne and cumin if you like, and some vinegar or lemon juice if sauce lacks acidity.
