This recipe is from week eleven of my food blog, Travel by Stove. I am attempting to cook one meal from every nation on Earth, and Antigua and Barbuda is my eleventh stop. You might think bacon and banana sounds like a strange combination, but it works surprisingly well. This recipe comes together pretty quickly and can be cooked on an indoor grill or on the barbecue.

4 pork chops
3/4 tablespoon cumin
salt and pepper (to taste)
1 lemon, juice of
2 tablespoons butter, softened
2 bananas
6 slices bacon
beer (optional)

Steps:

  • Combine the butter with the cumin, salt and pepper. Rub the pork chops all over with the mixture.
  • Now put the pork chops on the grill and cook them over medium heat for about 7 and a half minutes per side.
  • Cook the bacon in a frying pan for just a couple of minutes, long enough for some of the fat to render. Remove and let cool.
  • Cut the bananas into chunks sprinkle them with lemon juice. Wrap the bacon around each chunk. Skewer each wrapped piece through the overlap in the bacon.
  • After the chops have been cooking for about 15 minutes, turn the heat down to medium low and put the bacon and bananas on the grill. Use a meat thermometer to make sure the chops aren't cooking too fast.
  • Continue to turn the chops and the bacon/banana skewers. At this point you can also start basting the chops with beer.
  • When the chops and bacon are thoroughly cooked, remove from the grill and serve.

2 tablespoons olive oil
4 bone-in pork chops (1 inch thick)
Coarse salt and ground pepper
4 strips bacon, coarsely chopped
1 medium onion, cut into 1/2-inch slices
1 head green cabbage (about 2 1/2 pounds), cored and cut into 8 wedges
3 tablespoons all-purpose flour
3 cups whole milk

Steps:

  • Preheat oven to 400 degrees. Set a large heavy roasting pan across two burners over high heat; add oil and heat. Season pork with salt and pepper; brown on one side, 3 to 5 minutes. Flip and cook 1 minute more. Transfer to a plate.
  • Reduce heat to medium. Add bacon; cook until golden, about 5 minutes. Add onion; cook until softened, 5 minutes. Add cabbage, cut side down, and cook until light golden, about 6 minutes. Flip and cook until slightly tender, about 3 minutes. Add flour and stir until coated. Add milk and cook, stirring constantly, until thickened, about 4 minutes. Season with salt and pepper, then nestle pork chops in sauce. Transfer pan to oven. Bake until pork is cooked through, about 10 minutes.

1 large banana, green tip
1 tablespoon vegetable oil
2 boneless pork loin chops, 1-inch thick
1 large garlic clove, pressed
2 tablespoons fresh ginger, slivered
1/2 cup coconut milk, canned
1/4 cup water
2 tablespoons chutney
1/8 teaspoon cayenne pepper
1 tablespoon lime juice

Steps:

  • Cut banana in half crosswise, then legthwise.
  • In a skillet, saute the banana in oil 30-45 seconds, shaking the skillet. Remove the banana.
  • Add more oil to the skillet if necessary and brown the chops on each side, about 2-3 minutes.
  • Stir in the garlic and ginger, saute lightly. Stir in coconut milk, water, chutney and cayenne.
  • Spoon mixture over the chops. Cover and simmer 8-10 minutes. Stir in lime juice and remove from heat.
  • Generously spoon the sauce over the chops and banana and serve with white rice or shredded lettuce.

1 cup all-purpose flour
1 tablespoon garlic salt
6 pork loin chops, 1 inch thick
1 tablespoon olive oil
2 teaspoons dried basil
½ cup Marsala wine
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the flour and garlic salt in a large resealable plastic bag. Place pork chops in the bag, and shake to coat.
  • Heat the oil in a skillet over medium heat, and brown chops on both sides. Transfer to a baking dish, and sprinkle with basil. Cover pan with aluminum foil.
  • Bake 45 minutes in the preheated oven. Remove foil, pour in Marsala wine, and continue baking 15 minutes, basting occasionally with the wine. Skim off and discard any fat and season chops with salt and pepper to serve.
