Number Of Ingredients 8

A slab of pork with fat
Crushed garlic
1/2 cup of soy sauce
1 cup of fruit cocktail syrup
Peppercorns
A dash of salt (optional)
1 tbsp sugar (optional)
Spring onion, cut into small ringlets for garnishing (optional)

Steps:

  • Drop pork slab into a large saucepan with just enough boiling water to cover and simmer. Skim the surface until the broth is clear. Simmer for an hour then pour in soy sauce, fruit syrup and all the other ingredients. Simmer with lid closed over low fire, turning the meat from time to time, for hours or until the rind quite literally melts in your mouth. Leave little sauce to moist the meat. Slice and serve with rice and blanched vegetables. Note: If you don't have fruit cocktail syrup, replace it with fruit juice (orange, pineapple, apple or tropical will do) or just vinegar and probably more sugar.

Tips:

  • Choose the right cut of pork. Pork shoulder (also known as pork butt) is the best cut for hamonado because it is well-marbled and has a lot of flavor. Other good options include pork loin and pork tenderloin.
  • Marinate the pork overnight. This will help to tenderize the meat and infuse it with flavor. You can use a variety of marinades, but a simple one made with soy sauce, garlic, and brown sugar is always a good option.
  • Cook the pork slowly. Hamonado is a slow-cooked dish, so be patient and let the meat cook until it is fall-apart tender. This will usually take at least 2 hours.
  • Baste the pork regularly. This will help to keep it moist and prevent it from drying out. You can use the marinade, water, or even pineapple juice to baste the pork.
  • Serve hamonado with your favorite sides. Some popular choices include rice, mashed potatoes, and green beans.

Conclusion:

Pork hamonado is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great option for a weeknight meal or a special occasion. With a little planning and effort, you can easily make this classic Filipino dish at home.
