1 bay leaf
1 whole clove
1/2 cup dry red wine
1 teaspoon balsamic vinegar
2 teaspoons honey
1 tablespoon olive oil
2 tablespoons finely chopped shallots
2 tablespoons butter

  • To ensure the pork medallions cook evenly, make sure they are all of a similar thickness. If you have thicker medallions, you may need to cook them for a few minutes longer.
  • To add more flavor to the pork medallions, marinate them for at least 30 minutes before cooking. You can use a simple marinade made with olive oil, lemon juice, herbs, and spices.
  • When searing the pork medallions, make sure the pan is hot enough so that the medallions get a nice sear. This will help to lock in the juices and flavor.
  • To make the spiced tomato pan gravy, use a good quality canned tomato sauce. You can also use fresh tomatoes, but you will need to peel and seed them first.
  • Be sure to season the gravy to taste. You may want to add more spices, herbs, or salt and pepper.
  • Serve the pork medallions with the spiced tomato pan gravy over rice, mashed potatoes, or your favorite side dish.
