2 onions, sliced
1/2 cup KRAFT Sweet Brown Sugar Barbecue Sauce
1/4 cup apple juice
2 Tbsp. dried thyme leaves
6 Granny Smith apples, sliced
1/2 cup pitted prunes

Steps:

  • Heat oven to 350°F.
  • Heat oil in large ovenproof Dutch oven or large deep skillet on medium-high heat. Add meat and onions; cook 3 min. or until evenly browned on all sides, turning meat as needed and stirring onions occasionally.
  • Mix barbecue sauce, apple juice and thyme until blended; pour over ingredients in pan. Cover with lid; simmer on medium-low heat 10 min. Transfer to oven.
  • Bake 1-1/2 hours or until meat is done (145ºF), adding apples and prunes to the pan after 1 hour. Remove from oven. Let meat stand 3 min. before slicing to serve with the fruit mixture.

4 garlic cloves, pressed
4 teaspoons fresh rosemary, chopped
4 teaspoons fresh thyme, chopped
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
2 tablespoons extra virgin olive oil
2 1/2 lbs pork loin roast, trimmed of fat

Steps:

  • Preheat oven to 400°F
  • Line 13 x 9 x 2" roasting pan with foil.
  • Mix first 5 ingredients in bowl. Rub garlic mixture all over pork.
  • Place pork, fat side down, in prepared roasting pan.
  • Roast pork 30 minutes.
  • Turn roast fat side up.
  • Roast until thermometer inserted into center of pork registers 155°F., about 25 minutes longer. (some brands have a handy dandy pop-up timer-Life is Good!
  • Remove from oven; let stand 10 minutes.
  • Pour any juices from roasting pan into small saucepan; set over low heat to keep warm.

1 teaspoon fennel seed
6 minced garlic cloves
4 teaspoons chopped fresh thyme or 1 teaspoon dried thyme
1 tablespoon vegetable oil
1 teaspoon dry mustard
salt and pepper
1 (2 1/4 lb) double boneless center cut pork loin roast (about 1.125 kg)

Steps:

  • Using a mortar and pestle crush fennel seeds, place in a small bowl.
  • Mix in garlic, thyme, oil, dry mustard and salt & pepper to form a paste. Rub all over roast.
  • Place roast on a rack in roasting pan. Roast in centre of a 325°F (160°C) convection oven until meat thermometer insterted in the middle registers 160°F (70°C) - about 80 minutes.
  • Transfer to cutting board, tent with foil & let stand 10 minutes before slicing.
  • If cooking in a conventional oven, set temperature to 325°F (160°C) and roast on middle rack for approximately 2 hours.

1 boneless pork loin roast, about 3 pounds (about 10 - 12 inches in length)
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
4 strips lemon zest (2 x 1/2-inches, about the zest of 1/2 lemon), bitter white pith removed
3 cloves garlic, peeled
1 teaspoon kosher salt
1 teaspoon thyme (use 2 - 3 teaspoons if using fresh thyme leaves)
1/2 teaspoon black peppercorns

Steps:

  • Tie the pork roast with butcher's twine at one - inch intervals to help it maintain a round shape for even cooking (a butcher will also be able to do this for you). The pork roast should be approximately 12 - inches in length, not doubled and tied. Rub the roast with the oil and vinegar. Place the lemon zest, garlic, kosher salt, thyme, and peppercorns in the work bowl of your Cuisinart® Food Processor. Process on Grind for 10 seconds, stop and scrape the work bowl, process on Grind 5 - 10 seconds longer, until the mixture resembles a coarse paste. Rub the paste evenly all over the surface of the roast. The meat may be roasted immediately or covered loosely with waxed paper, and refrigerated for up to 8 hours (the longer the rub is on the meat, the more intense the flavor will be). If refrigerated for longer than 1 hour, take the meat out of the refrigerator 20 - 30 minutes before roasting. Arrange the rack in Position A and preheat the Cuisinart® TOB-Series Toaster Oven Broiler to 450 degrees F Bake Setting. 5 pounds pork roast, trimmed
3 cloves garlic, sliced
1 teaspoon salt
½ tablespoon ground black pepper
3 bay leaves
½ cup cider vinegar
1 teaspoon dried thyme

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
