3 to 4 pork tenderloins (about 1 pound each), cut into 1-inch slices
1 cup all-purpose flour
1/4 cup butter, cubed
1/4 cup canola oil
1 cup white wine or chicken broth
1/2 cup water
1 large onion, chopped
1 to 2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon each dried thyme, oregano and rosemary, crushed
1 pound fresh mushrooms, sliced
Hot cooked fettuccine

Steps:

  • Dredge pork slices in flour. In a large skillet, heat butter and oil. Brown pork on both sides in batches; remove and keep warm. Stir in the wine, water, onion, garlic and seasonings into drippings. Return pork to skillet, layering if necessary. Top with mushrooms., Cover and cook on low heat for 15-20 minutes or until meat is no longer pink. Serve with fettuccine.

1 teaspoon salt, divided
1/2 teaspoon pepper, divided
4 tablespoons butter, divided
1/2 pound sliced fresh mushrooms
2 celery ribs, sliced
1 cup reduced-sodium chicken broth
1/3 cup heavy whipping cream
3 tablespoons minced fresh parsley, divided
Hot cooked egg noodles

Steps:

  • Pound pork slices with a meat mallet to 1/2-in. thickness; sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. In a large skillet, heat 1 tablespoon butter over medium-high heat. Add pork in batches; cook 2-3 minutes on each side or until pork is golden brown, using 1 tablespoon butter as needed. Remove; keep warm., In same pan, heat remaining butter over medium heat. 1 1/2 lbs pork tenderloin
2 tablespoons capers
1/3 cup white wine
1 1/2 tablespoons lemon juice
1 -2 tablespoon olive oil
2 tablespoons butter
1/2 cup flour
1/2 teaspoon sea salt

Steps:

  • 1. Slice the pork tenderloin into ½ inch slices on a diagonal.
  • 2. Pound thin between plastic wrap with a meat mallet.
  • 3. Sift together the flour and salt.
  • 4. Lightly dredge the pork and shake off any excess flour.
  • 5. In a large skillet, heat the olive oil over medium heat.
  • 6. Cook the pork 2-3 minutes on each side or until golden and transfer to a warm plate.

2 crisp cooking apples (such as Gala, Cameo or Golden Delicious), sliced
1 medium onion, sliced
1/2 teaspoon caraway seeds

1 pound sauerkraut, rinsed, drained and squeezed dry
1/2 cup apple cider
1/2 cup chicken stock
8 pork scallopini or thin cutlets (about 11/2 pounds)
2 teaspoons paprika
1/4 cup chopped fresh parsley

6 ounces spaghetti squash, cooked
8 ounces sea scallops
2 teaspoons seasoned rice flour
2 tablespoons fresh lemon juice
3 ounces crushed tomatoes
1 teaspoon olive oil
1 teaspoon garlic, minced
1 teaspoon fresh basil, chiffiande
to taste kosher salt
to taste black pepper
garnish with pecorino romano cheese, grated

Steps:

  • preheat oven to 425 degrees. cut squash in half the long way. place squash, flat side down, on a pan sprayed sheet pan with kosher salt. Add 1/2 cup water and place in over for 40-50 minutes.
  • create sauce by heating olive oil in sauce pot, until just smoking, add garlic and "toast", saute until golden brown.
  • add crushed tomatoes and simmer around 10-15 minutes. season with salt, pepper and fresh basil.

  • reheat by sauteing breifly in a heated pan.
  • to plate you will place a nest of squash in the center of the plate. place 6 scallops falling off the nest and top with 1/2 cup or so of tomato basil sauce.
  • sprinkle with fresh grated cheese, optional.
