Tofu and watercress are a great, flavorful combination, and a wholesome one, too! My teenage boys who don't like greens actually love this dish. Red chile garlic paste can be substituted for the ground black pepper.

Time 20m

Yield 4 servings

Number Of Ingredients 11

1 tablespoon peanut or other oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1/4 teaspoon crushed red pepper flakes, plus more to taste
1/4 to 1/2 pound ground pork
1/2 cup chopped scallions, green part only
1/2 cup stock or water
1 pound soft or silken tofu, cut in 1/2-inch cubes
2 tablespoons soy sauce
Salt to taste
Minced cilantro for garnish, optional

Steps:

  • Put oil in a deep 10-inch skillet or wok, preferably nonstick, and turn heat to medium-high. A minute later, add garlic, ginger and red pepper flakes, and cook just until they begin to sizzle, less than a minute. Add pork, and stir to break it up; cook, stirring occasionally, until it loses most of its pink color.
  • Add scallions and stir; add stock. Cook for a minute or so, scraping bottom of pan with a wooden spoon if necessary to loosen any stuck bits of meat, then add tofu. Cook, stirring once or twice, until tofu is heated through, about 2 minutes.
  • Stir in the soy sauce; taste, and add salt and red pepper flakes as necessary. Garnish with cilantro if you like, and serve.

TOFU AND PORK STIR-FRY

Tofu and Pork Stir-Fry image

Provided by Alex Guarnaschelli

Categories     main-dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 15

4 tablespoons canola oil
1 pound firm tofu, cut into 1-inch cubes
2 teaspoons coriander seeds, lightly crushed
1 pound ground pork
Kosher salt
1/2 teaspoon crushed red pepper flakes
4 large cloves garlic, thinly sliced
2 scallions, thinly sliced
1 cup snow peas
2 red bell peppers, seeded and cut into 1-inch strips
2 tablespoons low-sodium soy sauce, plus more as needed
1 scant tablespoon honey
1 small knob fresh ginger, grated
Zest and juice of 1 large lemon
1 tablespoon rice vinegar or red wine vinegar

Steps:

  • Cook the tofu: Heat a large heavy-bottomed skillet or wok over high heat. Add 3 tablespoons oil. When the oil begins to smoke, remove the skillet from the heat and quickly (and carefully!) add the tofu in a single layer. Return the skillet to high heat and cook, stirring from time to time, until the tofu is lightly browned, 2 to 3 minutes. Carefully remove the tofu to a plate. Add the coriander seeds and toast for 15 seconds. Add the ground pork in a single layer, then sprinkle with salt and the red pepper flakes and brown over medium-high heat until cooked through, 3 to 5 minutes. Remove from the heat and add the pork to the tofu.
  • Cook the vegetables: Return the skillet to the heat and add the remaining tablespoon oil. Stir in the garlic and scallions and cook over medium heat for about 1 minute. Add the snow peas and peppers and cook until they become tender, 2 to 3 minutes. Stir in the soy sauce, honey, ginger and lemon zest and juice. Simmer for an additional minute. Taste for seasoning.
  • Finish: Add the pork and tofu back to the skillet and gently stir to reheat and combine, 1 to 2 minutes. Transfer to a platter and add the vinegar and additional soy sauce to taste.

Time 40m

Number Of Ingredients 9

2 cups chopped napa cabbage
1/2 tablespoon salt
Canola oil to cook
1/2 pound ground pork
2 tablespoons minced ginger

  • Plating: Spoon contents of wok over the tofu on a large serving platter, serve family style.

BBQ PORK WITH TOFU AND PEA PODS IN HOT BEAN SAUCE

BBQ Pork With Tofu and Pea Pods in Hot Bean Sauce image

This is a dish I developed with my chef when I still owned my restaurant. It's easy enough to make your own Chinese bbq pork (most Chinese cookbooks have recipes) but I almost always buy it in Chinatown; it can make a mess of your oven if you do it yourself. The hot bean sauce comes in cans and keeps for a long time refrigerated. (Transfer to a plastic container with a tight cove

Categories     Pork

Time 20m

Yield 2-3 serving(s)

Number Of Ingredients 17

1 cup sliced Chinese barbecue pork (, buy in China-town or make your own)
firm tofu, sliced domino size
1 cup pea pods, strings removed
oil (vegetable, Canola, peanut)
cornstarch, in a little water (for binder)
3 drops sesame oil
1 -3 teaspoon minced garlic
1 teaspoon minced ginger
2 minced shredded scallions or 2 minced shredded scallions
1 teaspoon szechuan hot bean sauce
1 -2 teaspoon dark soy sauce
1 teaspoon dry sherry
salt (optional)
1 pinch sugar
hot pepper sauce (optional)
1/4 cup chicken stock
extra hot sauce (as desired)

Steps:

  • Have a pot of boiling water handy when starting to cook this recipe.
  • Keep a bowl handy lined with a sieve.
  • When ready to start cooking carefully put the tofu into the boiling water.
  • Heat wok to smoking; add a tablespoon or two of oil and stir in seasonings.
  • (Note: if the wok looks too dry during cooking, just add a little more oil by pouring it directly onto the hot metal).
  • As soon as the seasonings start to give off a pungent aroma add the bbq pork and stir fry for 2- 3 minutes to coat with oil and seasonings and to heat through.
  • Add the pea pods and continue stirring until they're hot.
  • Pour the tofu into a colander or sieve and let it drain while you continue the recipe.
  • Give the sauce ingredients a good stir and pour into the wok, trying to hit the metal surface rather than the contents.
  • When it starts to bubble thicken it with a little of the binder.
  • (The secret is to just draw the sauce together without making it gummy).
  • Stir in a few drops of the sesame oil.
  • Very carefully stir and toss in the tofu.
  • Serve immediately on a heated platter with steamed rice.

Pork With Tofu - {Butadofu} Recipe image

Provided by á-170456

Number Of Ingredients 11

2 tablespoons peanut oil
1 pound pork cut into strips
1 onion cut into slices
1 can water chestnuts sliced
3 fresh mushrooms sliced
1 cup water
2 tablespoons sugar
2 tablespoons soy sauce
1/2 teaspoon grated ginger
2 tablespoons white soybean paste
1 package tofu cubed

Steps:

  • In a skillet (a wok will work too), heat oil and stir-fry pork. Add onions, water chestnuts and water. Combine sugar, soy sauce, ginger and soybean paste. Add to pork and vegetables. Add tofu. Cook about five minutes. Serve. This recipe yields 4 servings.

Tips for Making Pork with Tofu (Butadofu)

  • Choose high-quality ingredients: Use fresh, flavorful pork and firm, smooth tofu. Look for pork that is well-marbled with fat, as this will help keep it moist and tender during cooking.
  • Marinate the pork: Marinating the pork in a mixture of soy sauce, mirin, and sake will help tenderize it and infuse it with flavor. Be sure to marinate the pork for at least 30 minutes, or up to overnight.
  • Sear the pork: Searing the pork in a hot pan will help to create a flavorful crust and lock in the juices. Be sure to sear the pork in a single layer, and don't overcrowd the pan, or the pork will steam instead of sear.
  • Simmer the pork and tofu: After searing the pork, add it to a pot with the tofu and the remaining marinade ingredients. Bring the mixture to a simmer and then reduce the heat to low. Simmer the pork and tofu for at least 30 minutes, or until the pork is cooked through and the tofu is heated through.
  • Serve with your favorite sides: Pork with tofu (butadofu) can be served with a variety of sides, such as steamed rice, roasted vegetables, or a simple green salad.

Conclusion

Pork with tofu (butadofu) is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of pork and tofu creates a unique flavor and texture, and the simple marinade and sauce make it a flavorful and satisfying dish. With a few simple tips, you can make a delicious and authentic pork with tofu (butadofu) dish that your whole family will enjoy.
