Steps:
- Slice sweet bread into about 20 slices, 1" thick. Liberally spray a 9" x 13" baking dish with cooking spray and arrange bread slices in 2 rows overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg, and salt, and beat with a rotary beater or whisk until blended (but not too bubbly). Pour mixture over the bread slices, making sure they're evenly covered (get the mixture in between the slices with a spoon). Cover and refrigerate overnight. The next morning, preheat oven to 350º F. Combine all the ingredients for the topping and spread evenly over the top of the bread. Bake for 40 minutes, until puffed and lightly golden. Serve with coconut pancake syrup (I use homemade pear or blackberry)But most of us didn't use the syrup at all!).
PORTUGUESE BREAD FRENCH TOAST
One of the best uses for Portuguese bread is in baked French toast. Because the bread is so light it soaks up a lot of the batter and becomes too fragile to pan-fry. So...baking is the answer. Serve the French toast with maple syrup.

Tips:
- Use stale bread for the best results. Fresh bread will be too soft and will fall apart.
- Slice the bread thickly, about 1 inch thick. This will help the bread to hold up to the custard and frying.
- Use a flavorful bread, such as brioche, challah, or French bread. This will give the French toast a richer flavor.
- Make sure the custard is well-coated on all sides of the bread. This will help the French toast to cook evenly.
- Cook the French toast over medium heat. This will help to prevent the bread from burning.
- Serve the French toast immediately with your favorite toppings, such as butter, syrup, fruit, or whipped cream.
