GARLIC PRAWNS

This is a great easy prawn marinade, they are great on the BBQ, we put them out as appetizers but they can also be a main course. I've also sauteed them with the marinade and used the sauce with pasta or just lapped it up with French bread! ENJOY.

From Madhur Jaffrey's Simple Indian Cookery. My husband made it and it is so elegant and delicious. She called for a 1/2 tsp cayenne in the sauce, but we reduced and you can reduce further if you're sensitive to heat. Serve with basmati rice, naan and green peas.

Tips for Cooking Prawns in a Dark Sauce:

  • Use fresh, large-sized tiger or king-sized prawn. Smaller shrimp tend to overcook quickly and won't hold up well in the dark sauce.
  • Clean and devein your shrimp properly. Remove the head, shell, and tail, then use a sharp knife to make a shallow incision along the back of the shrimp and remove the dark vein.
  • Marinate your shrimp in a mixture of soy sauce, Chinese rice wine, and cornstarch for at least 30 minutes. This will help to tenderize the shrimp and infuse them with flavor.
  • Use a large wok or skillet to cook the shrimp. This will ensure that the shrimp are evenly cooked.
  • Cook the shrimp over high heat, stirring constantly. This will help to prevent the shrimp from sticking to the pan and overcooking.
  • Add the dark soy sauce and other sauce ingredients towards the end of cooking. This will help to prevent the shrimp from becoming tough.
  • Serve the shrimp immediately with rice or noodles. The dark sauce is also delicious served over vegetables or tofu.

Conclusion:

These recipes are a great way to enjoy shrimp in a flavorful and delicious sauce. Whether you prefer a simple recipe or something more elaborate, there's sure to be a recipe here that you'll enjoy. Just remember to follow the tips above to ensure that your shrimp turn out perfect.
