PRETTY PASTA SALAD WITH PEAS, PARMESAN AND HAM
This is a wonderful pasta salad which I have been making for at least 15 years. In fact when I first moved to Greece and my mother visited me a year later, one of the first things she asked me was about how to make this recipe. I have made it for buffets and even for my engagement party and it tastes as good as it looks which is saying something! Enjoy.

HAM PASTA SALAD
I "invented" this salad as I went along...it's a combination of various pasta salad recipes I'd seen. It can be served as a side dish, of course. In summer, however, my husband doesn't care for hot meals, so I make it as a main dish. We're recent city transplants with two young children, ages 6 and 3.

Steps:
- In a large bowl combine salad ingredients. In a smaller bowl, mix dressing ingredients. Pour dressing over macaroni mix and toss to blend well. Cover and refrigerate several hours or overnight. Remove from refrigerator 30 minutes before serving. (More mayonnaise or sour cream may be needed.)
Tips:
- Prep Ahead: To save time, cook the pasta and peas in advance. Let them cool completely, then store them separately in airtight containers in the refrigerator for up to 3 days.
- Use Fresh Ingredients: Fresh vegetables, herbs, and cheese will give your pasta salad the best flavor. Look for ripe, colorful produce, and use freshly grated Parmesan cheese for the best results.
- Don't Overcook the Pasta: Al dente pasta is the perfect texture for pasta salad. Cook the pasta according to the package directions, but be sure to taste it a minute or two before the recommended cooking time is up. It should be slightly firm to the bite.
- Chill Before Serving: Pasta salad is best served chilled. After assembling the salad, cover it and refrigerate it for at least 30 minutes before serving. This will allow the flavors to meld and the pasta to absorb the dressing.
Conclusion:
With its vibrant colors, fresh flavors, and versatile ingredients, this Pretty Pasta Salad with Peas, Parmesan, and Ham is a delightful dish that's perfect for any occasion.
