2 large eggs
1 cup pumpkin puree
1/2 cup vegetable oil
1 cup sugar
1/2 teaspoon ground ginger

1 1/2 cups flour
1/2 teaspoon salt

1 1/2 cups powdered sugar
4 Tablespoons maple syrup (more or less)

Steps:

  • Set oven to 350F
  • Spray a non-stick standard loaf pan with cooking spray.

1 cup light brown sugar, firmly packed
1/2 cup maple syrup
1/2 cup vegetable oil

Steps:

  • Preheat oven to 325°F.
  • Grease a 9x5x3-inch loaf pan. Dust with flour. Set aside.

1/2 cup butter, softened
1/2 cup sugar
2 large eggs, room temperature
1/2 cup canned pumpkin
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt

1/3 cup buttermilk
1/2 teaspoon ground cinnamon
1 teaspoon molasses
COATING:
5 tablespoons butter, melted
1 tablespoon maple syrup
1/4 cup sugar
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in pumpkin.
