1/4 teaspoon freshly ground pepper
1/4 cup butter
2 cups frozen pearl onions, thawed, patted dry
1 package (8 oz) fresh cremini mushrooms, quartered
2 cups sliced carrots
1 cup dry red wine
2 sprigs fresh thyme
1 can (10 1/2 oz) beef consommé
2 tablespoons Gold Medal™ all-purpose flour
Fresh rosemary leaves, if desired

Steps:

  • Sprinkle tenderloin with salt and pepper. In 12-inch skillet, melt 2 tablespoons of the butter over medium-high heat. Add beef; cook 5 minutes. Remove beef from skillet; cover to keep warm.
  • In skillet, melt remaining 2 tablespoons butter. Add onions, mushrooms and carrots; cook 7 minutes, stirring occasionally, until mushrooms are browned. Add wine and thyme; heat to boiling. Reduce heat; simmer uncovered 7 minutes or until wine is reduced by half, stirring to loosen browned bits from bottom of skillet.
  • In small bowl, stir together beef consommé and flour with whisk. Add flour mixture and beef to skillet. Cook 3 minutes or until sauce thickens. Garnish with rosemary. Serve immediately.

Beef bourguignon can be cooked a few different ways. I used to cook mine the traditional way - in the oven for several hours but the recipe was somewhat high maintenance. Over the years, I tried modifying my recipe so I could use my crock-pot without losing any of that beef bourguignon flavor. This is what I ended up with and the meat is so tender and so delicious you may never use your oven again!

6 slices bacon, cut in 1-inch pieces
3 lbs beef rump or 3 lbs chuck, cut in 1 1/2-inch cubes
3 large carrots, peeled and sliced diagonally
1 medium onion, cubed
3 tablespoons flour (or for GF, 1 ¼ tbsp corn starch)
14 ounces low sodium beef broth (about 2 cups)
1 tablespoon tomato paste
2 teaspoons garlic, minced
1 teaspoon dried thyme
1 whole bay leaf
14 ounces white pearl onions, peeled (I use frozen, thawed and drained)
1 lb cremini mushroom, sliced
2 teaspoons salt
1/2 teaspoon black pepper
1/2 cup red wine

Steps:

  • cook bacon in fry-pan, remove and drain most of the grease out of the pan. While bacon is cooking, prep your onion and carrots and set aside.
  • 2. add beef cubes to same pan used for bacon and brown well. Placed browned beef cubes in crock-pot that has been coated with cooking spray.
  • 3. add chopped cooked bacon, thyme, tomato paste, garlic, bay leaf, and pearl onions to crock-pot on top of beef (no need to stir). Brown carrot, and cubed onion in same pan as meat and season with 1 teaspoons salt and pepper and add to crock-pot.
  • 4. cook mushrooms and 1 tsp salt in same pan (use cooking spray if needed). Stir in flour (or corn starch). Add broth, mix well until you get a thick mushroom gravy and add as top layer in crock-pot. Cover and cook on low 7 hours.
  • 5. add wine about an hour before serving (at 6 hours of cooking in crock-pot) and stir. Continue cooking. Serve alone with crusty bread or with noodles.
  • tip for thicker gravy: in a small pot, mix 1 tbsp corn starch with 2 tbsp water (1 tbsp butter optional) add to crock pot, stir well and cover on high for 10 minutes.

1 small onion, sliced
2 sprigs fresh parsley, stems removed

1 beef sirloin tip roast (2 pounds), cut into 1-inch cubes

  • In a small bowl, combine 1-1/3 cups wine, onion, parsley, oil, garlic, bay leaf, pepper and thyme. Pour half in a large resealable plastic bag; add the beef. Seal and turn to coat; refrigerate for 4 hours or overnight, turning bag occasionally. Cover and refrigerate remaining marinade. , Drain marinade from beef; pat meat dry with paper towels. This is a quick recipe I make anytime I can't decide what I want for dinner. Sometimes I vary it with more veggies or sour cream depending on my taste that day. I also adjust the liquids to make the amount of gravy/sauce I want - which is a lot so I tend to be more heavy handed than I wrote this for. Adjust to your personal taste. ;) I usually serve it over pasta, but it goes great with mashed potatoes as well! My kids love it and so do my friends and family. **Last time I made this I omitted the broth and increased the red wine - turned out great - just seasoned to taste. I added a tbsp of Tony Cachere's Cajun Brown Gravy mix to the sauce in place of the corn starch and salt. See pics! Yummy!! Great one to experiment with to your tastes!!

2 lbs beef, fajita strips (or beef of your choice cut in 2 inch pieces)
1 cup beef broth (I prefer Pacific Natural Foods Organic either Beef or Mushroom for this)
1 cup red wine (cabernet sauvignon, zinfandel, whatever your taste)
1 (8 ounce) package fresh mushrooms, sliced
1 cup onion, chopped (walla walla or vidalia preferred)
black pepper, to taste
salt, to taste
2 tablespoons garlic, to taste (minced from jar, like Spice World)
1/2 teaspoon white pepper
1 bay leaf
2 tablespoons olive oil
2 teaspoons cornstarch
1 cup cold water

Steps:

  • In deep, large skillet brown beef with olive oil, garlic, black and white pepper.
  • Add onions and cook for another 2 minutes.
  • Pour broth and red wine over beef and onions and bring to a simmer.
  • Add bay leaf and simmer for 10 minutes or so to absorb flavors, adding spices to taste.
  • Add sliced mushrooms and cook until desired consistency, approximately 5-7 minutes.
  • Mix cold water and corn starch in cup and spoon into skillet until desired thickness of gravy is achieved.
  • Remove bay leaf and cook and additional 5 minutes to ensure starch is cooked (no starchy flavor left over).
  • Be sure to stir fairly frequently.
  • If desired, mix in sour cream for a creamy gravy or leave alone for burgundy flavor.
  • Serve over your favorite pasta (i.e. Cellentani,farfalle, ziti, etc) or mashed potatoes and a fresh veggie like sautéed green beans or green salad.

1 cup canned beef broth
