Provided by Charlotte J

Categories     Spinach

Time 10m

Yield 6-8 serving(s)

Number Of Ingredients 9

1/2 cup vegetable oil
1/4 cup raspberry vinegar
2 teaspoons Dijon mustard
1 teaspoon sugar
1/2 teaspoon salt
1 (10 ounce) package fresh spinach, torn
4 ounces blue cheese, crumbled
1 cup fresh blueberries
1/2 cup chopped pecans, toasted

Steps:

  • In a jar with tight-fitting lid, combine first five ingredients and shake well.
  • In a large salad bowl, toss the spinach, blue cheese, blueberries and pecans.
  • Add dressing and toss gently.
  • Serve immediately.

Tips:

  • Choose fresh, ripe ingredients for the best flavor. Slightly wilted spinach or mushy blueberries will detract from the salad's overall taste and texture.
  • Use a variety of nuts and seeds for added crunch and flavor. Almonds, walnuts, pecans, sunflower seeds, and pumpkin seeds are all great options.
  • Add a protein source to make the salad more filling. Grilled chicken, shrimp, or tofu are all good choices.
  • Make a homemade vinaigrette dressing for the best flavor. A simple combination of olive oil, vinegar, Dijon mustard, and honey is all you need.
  • Store the salad in an airtight container in the refrigerator for up to 3 days. The dressing should be stored separately and added just before serving.

Conclusion:

Blueberry spinach salad is a delicious, healthy, and easy-to-make salad that is perfect for any occasion. With its vibrant colors, sweet and tangy flavors, and crunchy texture, this salad is sure to please everyone at your table. So next time you're looking for a light and refreshing salad, give this blueberry spinach salad a try.
