CURRY PUMPKIN SOUP

This is a wonderfully soothing and savory soup - a perfect choice for a holiday party or dinner. Adjust the amount of curry and soy sauce for spiciness. Adjust the amount of half-and-half, or substitute heavy cream or milk for varying levels of creaminess. Also, you can add sauteed chopped sweet onions with the first three ingredients (this works best with a creamier version).

Tips:

  • Choose the right pumpkin: Look for pumpkins that are heavy for their size and have a deep, orange color. Avoid pumpkins with blemishes or bruises.
  • Roast the pumpkin before using it in the soup: Roasting the pumpkin will bring out its natural sweetness and flavor. To roast the pumpkin, cut it in half, scoop out the seeds, and brush the cut sides with olive oil. Roast the pumpkin at 400 degrees Fahrenheit for 30-40 minutes, or until it is tender.
  • Use a good quality curry paste: The curry paste is what will give your soup its flavor, so it is important to use a good quality paste. Look for a paste that is made with fresh ingredients and has a deep, rich flavor.
  • Add other vegetables to the soup: Feel free to add other vegetables to the soup, such as carrots, celery, or potatoes. This will make the soup more nutritious and flavorful.
  • Serve the soup with a dollop of yogurt or sour cream: A dollop of yogurt or sour cream will add a touch of richness and creaminess to the soup.

Conclusion:

Curried pumpkin soup is a delicious and easy-to-make soup that is perfect for a fall day. The soup is made with roasted pumpkin, curry paste, and coconut milk. It is flavored with ginger, garlic, and cumin. The soup can be served with a dollop of yogurt or sour cream.
