Time 35m

Yield 4 serving(s)

Number Of Ingredients 5

400 g potatoes, peeled and diced
1 (185 g) can tuna in water or 1 (185 g) can mineral water, drained and flaked roughly
1 teaspoon lemon juice
1 teaspoon olive oil
salt & freshly ground black pepper

Steps:

  • Boil the potatoes in lightly salted water for 15-20 minutes, until they're tender.
  • When they're just cooked, drain and mash them.
  • Then stir in the tuna and lemon juice then season to taste.
  • Divide this into eight and shape into round fish cakes.
  • Heat the oil in a large, non stick frying pan and fry the fish cakes on one side for three minutes.
  • gently turn them over and fry the other side for a further two minutes.
  • Serve two tuna cakes per person, ideally with some spring onion salsa.

Tips:

  • Use high-quality tuna: Opt for tuna canned in olive oil or water, as it retains more moisture and flavor compared to tuna packed in brine. Look for tuna labeled "dolphin-safe" to ensure sustainable fishing practices.
  • Choose the right bread or cracker: Panko breadcrumbs or crushed crackers add a crispy texture to the tuna cakes. You can use different types of bread, such as white bread, wheat bread, or even Ritz crackers, depending on your preference.
  • Add moisture and flavor: Incorporate ingredients like mayonnaise, Dijon mustard, chopped onion, and fresh herbs to enhance the flavor and texture of the tuna cakes. You can also add vegetables like grated carrots or zucchini for added nutrition.
  • Don't overmix the tuna mixture: Overmixing can result in dense and tough tuna cakes. Mix the ingredients gently until just combined to maintain a light and fluffy texture.
  • Form the tuna cakes carefully: Use a spoon or your hands to form the tuna cakes into patties. Be gentle to prevent the mixture from breaking apart. You can also use a cookie cutter to create uniform shapes.
  • Cook the tuna cakes over medium heat: Cooking the tuna cakes over medium heat ensures that they cook evenly throughout without burning the exterior.
  • Serve with your favorite dipping sauce: Tuna cakes pair well with various dipping sauces, such as tartar sauce, remoulade, or a simple lemon-herb butter sauce.

Tuna cakes are a versatile and delicious dish that can be enjoyed as an appetizer, main course, or even as a sandwich filling.
