1 1/2 cups all-purpose flour
1/4 cup grapeseed oil
3 tablespoons butter
1 cup celery, diced
2 cups diced carrots
2 onions, finely diced

3 bay leaves
6 cups water
4 cups red wine
4 medium-sized potatoes, diced
1/2 cup sliced sauteed mushrooms

Steps:

  • Using half the flour (3/4 cup) coat the pieces of rabbit, shaking off any excess. Heat the oil and butter in a large heavy-bottomed saucepan, and brown the floured rabbit on all sides. Add the celery, carrots, onions, salt, pepper, bay leaves, 6 cups water and red wine, and stew for about 2 hours. Add the potatoes 45 minutes into the stewing process. Once the rabbit and all the vegetables are cooked, use some water to form a paste with the remaining 3/4 cup flour. Stir the flour mixture into the pot as a thickener. Add the already sauteed mushrooms to the stew and allow to simmer for about 10 minutes. Adjust seasonings, if necessary, and serve.

1 large rabbit
3 garlic cloves
1 onion
8 ounces bacon, in one piece
10 sprigs parsley
10 sprigs thyme
1 bay leaf
3 tablespoons olive oil
1 cup red wine
1 cup small onion
1 tablespoon sugar
1 tablespoon butter
12 new potatoes
fresh herb (chervil)
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Chop rabbit into 12 pieces, discard the head and feet.
  • Chop the onion and garlic finely.
  • Slice and dice the bacon.
  • Make a bouquet garni by tying together the parsley, thyme and bay leaf with string.
  • Sear the rabbit pieces in olive oil, until lightly browned, remove from casserole.
  • In the same pan, fry garlic, onion and the bouquet garni.
  • Add the bacon and allow to color lightly.
  • Pour off excess fat.
  • Return rabbit to pan and deglaze with the red wine.
  • Add 3 cups water, cover and cook for 1 hour 45 minutes.
  • Peel small onions and remove root ends.
  • Rinse well.
  • Cook the onions in water to cover, add sugar, butter, salt and pepper.
  • Cook until all water has evaporated and the sauce is caramelized.
  • (20 min) Peel and cut potatoes into narrow rectangles.
  • Add potatoes to rabbit stew after the stew has been cooking for 90 minutes.
  • Cook covered until tender.
  • Serve stew with caramelized onions and garnish with chopped chervil.

It is an acquired taste dish; once hooked, you can't get enough. Serve with fresh mashed potatoes and celery sticks. Use the stock as gravy for mashed potatoes. Always tastes better as leftovers. 2 ¾ cups red wine vinegar
3 cups water
1 ½ tablespoons white sugar
8 whole cloves
1 medium onion, thinly sliced
5 stalks celery, chopped
1 lemon, thinly sliced
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 tablespoon salt
1 teaspoon pickling spice
1 teaspoon ground black pepper
1 cup all-purpose flour
1 (2 1/2 pound) rabbit, cleaned and cut into pieces

Steps:

  • In a large pot, combine the water, white sugar, whole cloves, onion, celery, lemon, cinnamon, ground cloves, salt, pickling spice and black pepper. Bring to a boil, then turn off and allow to cool. Place the rabbit pieces into the mixture to marinate. Cover and refrigerate overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Spread flour out onto a parchment or aluminum foil lined baking sheet. Bake for about 10 minutes, stirring occasionally, until the flour is a light brown color.
  • Remove the rabbit from the marinade and pat dry. Strain the marinade, and discard the solids. Reserve the liquid for later.
  • Heat the oil in a deep skillet or Dutch oven over medium heat. Coat the chicken with the toasted flour. Place into the hot oil, and cook until browned on both sides. Remove from the pan, and set aside. If there is oil left in the pan, sprinkle enough of the toasted flour over it to absorb the liquid.
  • In a jar with a lid, mix 1/2 cup of the marinade with 1/4 cup of the remaining toasted flour. Close the lid, and shake vigorously until well blended with no lumps. Heat the pan with the rabbit drippings over low heat. Gradually stir in the marinade mixture, stirring constantly until slightly thickened.
  • Return the rabbit pieces to the pan. Cover and simmer over low heat for 1 hour, or until the meat is falling off of the bones. You may remove the bones prior to serving if desired.

1 rabbit, cut into serving size pieces
8 ounces bacon, cut into strips
2 medium onions, thinly sliced
1 garlic clove, finely chopped
3 large carrots, peeled and thinly sliced
16 fluid ounces dry red wine
3 teaspoons vegetable oil
1 teaspoon salt
6 black peppercorns
2 sprigs parsley
2 garlic cloves, crushed
1 bay leaf

Steps:

  • In a large shallow bowl, combine all the marinade ingredients together and stir to mix well.
  • Add rabbit pieces and baste them thoroughly.
  • Cover the dish and leave to marinate over-night or at least 12 hours.
  • Remove the rabbit from the marinade and dry on kitchen paper.
  • Strain the marinade into a jug and reserve. Preheat oven to 350°F.
  • In a flame-proof casserole, fry the bacon strips over moderate heat until they are quite crisp.

3 cups self-rising flour
14 tablespoons butter
1 bunch fresh tarragon, finely chopped
sea salt & freshly ground black pepper

1/2 a nutmeg
2 rabbit, jointed and cut into 10 pieces

sea salt & freshly ground black pepper
10 slices bacon, finely sliced
2 sprigs fresh rosemary
9 ounces mushrooms, cleaned and torn (field, shitake, or oyster)
1 large handful baby onion, peeled
24 ounces dark beer
1 1/2 pints chicken stock

Steps:

  • To make the dumplings, rub together the flour, butter, and tarragon with a dash of salt and pepper. Stir in enough milk to give you an unsticky, stiff dough. Knead together, then roll into a large snake. Cut into 18 equal sized pieces and roll into balls. Place on a sheet, and sprinkle nutmeg over the top. Move the tray to the fridge.
  • Heat a deep, ovenproof dish about a foot in diameter with a bit of olive oil and the knob of butter in the bottom, over medium-high heat. Coat the rabbit pieces in flour and shake off any excess. Put half the rabbit pieces in the pot and cook about 5 minutes until golden all over. Take those pieces out and cook the other pieces. Once they're all cooked, add the first pieces back, as well as a big pinch of salt and pepper and the bacon. Cook until the bacon has crisped. Add the rosemary, mushrooms and onions and fry another ten minutes.
  • Mix in a tablespoon of flour then pour in the chicken stock and beer. Cover and simmer for half an hour.
  • Preheat the oven to 375 degrees.
  • Place the dumplings on top of the stew, about half an inch apart. Drizzle them with olive oil and bake for 45 minutes.

MARINATED RABBIT STEW

  • Arrange rabbit on serving platter. Pour some of the gravy over the rabbit and serving remaining gravy in a gravy boat.

Steps:

  • Melt the butter in a heavy pan and fry the meat with the leeks and garlic till the vegetables are slightly softened and the meat lightly browned.
  • Add the barley, water, vinegar, bay leaves and seasoning.
  • Bring the pot to the boil.

a 3 pound rabbit jointed
¼ pound 2 ounces streaky bacon cut into stripes (slightly thicker than matches)
6 shallots roughly chopped
4 cloves garlic roughly chopped
2 bigger celery stalks chopped
bouquet garni (5-6 sprigs thyme, 3-4 bay leaves, 5-6 sprigs tied in outer leek)
1 bunch pasrley finely chopped
½ pound button mushroom (If you can only get bigger ones, half of quater them)
2 tablespoon fresh butter
salt, freshly ground pepper
1 bottle dry, not too fruity white wine
1 pint stock
For the stock:
rabbit giblets (liver, etc)
1 big carrot roughly chopped
1 onion
salt, pepper

Steps:

  • Season the rabbit pieces with salt and pepper, set aside. In a big, heavy-bottomed (preferably cast iron) pot fry bacon golden brown, until it has released its fat. With slotted spoon take out bacon and reserve. Fry meat pieces in the fat on all sides until golden brown. The pieces should fry not cook, so put only as many pieces in the pot as can well fry. When the meat pieces have a nice coulour, take them out onto a plate, cover with tinfoil and keep warm. Pour off most of the fat from the pot. Put the shallots in the pot, stir and scrap up any residues from the bottom (You might want to add 2 fl oz wine at this point). Add garlic, bouquet garni, stir well, then add bacon, rabbit and celery. Stir well. Add stock and as much wine as just covers meat. Braise on medium heat for app. 60-80 minutes, or until meat is tender. After 30 minutes check meat every 10 minutes. The meat should be tender but not overcooked. If necessary, add more wine during cooking. While the rabbit is cooking, wash the mushrooms under cold running water. In a 12-inch saute pan melt butter. Add mushrooms and saute them until golden brown. When the meat is almost done, add mushrooms and parsley. Take out the bouquet garni and discard. If the cooking liquid is to thin when meat is ready, take the meat peices out using a slotted spoon, cover and keep warm. On high heat reduce liquid until it reaches a sauce-like texture. Serve sauce with the meat. You can serve it with boiled new potatoes, or fresh bread, and the wine you used for cooking.

2 tablespoons vegetable oil
12 small white onions, peeled
4 slices bacon
4 sprigs fresh thyme, or 1 teaspoon dried
1 bay leaf
1 cup dry white wine
4 tablespoons heavy cream or creme fraiche
Salt and freshly ground pepper to taste, if necessary

Steps:

  • Cut the rabbit into 12 serving pieces. Place the pieces in a mixing bowl. Add the mustard and coat all the pieces well. Cover with plastic wrap. Place in the refrigerator and marinate for two to three hours, or more.
  • When ready to cook, heat the oil in a nonstick skillet. Add the rabbit pieces and the onions. Brown for about 10 minutes, stirring and turning the pieces.
  • Place the bacon slices in the bottom of a heavy skillet and cook over medium heat. Add the rabbit, onions, thyme, bay leaf and wine. Bring to a boil. 1/2 cup flour
4 carrots, diced
4 celery ribs, diced
2 potatoes, diced
1/2 onion, diced, very, very small
3 tablespoons garlic, minced
1/2 teaspoon rosemary
2 teaspoons oregano
2 teaspoons parsley
3 teaspoons salt
4 -7 cups cold water
1/2 cup hot water

Steps:

  • Cut the rabbit meat into small, bite-sized chunks. Mix together flour, rosemary, oregano, parsley, and salt. Then coat rabbit meat with flour mixture, saving any remaining flour mixture.
  • Melt butter in Large stew pot, and add onion. Cook until golden brown, adding an optional pinch of sugar.
  • Stir in garlic. Cook together for 2 or more minutes.
  • Add floured rabbit meat, and fry until cooked.
  • Add cold water and diced vegetables.
  • Simmer at least 1 hour, or until vegetables are done.

He was an avid hunter and this was one of his recipes. Growing up this was one of those annual meals with the whole family. Wild rabbit is the best, but it can be made with tame....

1 (2 to 3 lb.) rabbit
3 c red wine vinegar
3 c water
1 medium onion sliced
2 carrots, peeled and cut into pieces
1 Tbsp salt
1 tsp pickling spices
1/4 tsp pepper
1/2 c sugar
1/3 c all purpose flour
1 tsp salt
1/4 tsp pepper
3 Tbsp shortening
1/4 c all purpose flour

Steps:

  • 1. Cut rabbit into serving size pieces. Put into deep bowl and cover with a mixture of red wine vinegar, water, sugar, onion, carrots, 1 tablespoon salt, pickling spices and 1/4 teaspoon pepper. Cover and put into the refrigerator for 2-3 days to marinate. Turn the rabbit often.
  • 2. Drain rabbit pieces, reserving marinade. Dry on absorbent paper. Strain the marinade. Toss out the contents left in the strainer.
  • 3. Coat the rabbit pieces evenly by shaking 2 or 3 at a time in a paper or plastic bag containing a mixture of 1/3 cup flour, 1 teaspoon salt and 1/4 teaspoon pepper.
  • 4. Heat 3 tablespoons of shortening in a Dutch oven or heavy sauce pot.
  • 5. Add the rabbit pieces and brown slowly. Remove from heat. Gradually add 2 cups of the reserved marinade. Cover and simmer 45 minutes to an hour until the meat is tender.
  • 6. Add 1/4 cup of flour to 1/2 cup of the reserved marinade. Blend well. Pour 1/2 of this flour mixture into cooking liquid, stirring constantly. Bring to a boil. Gradually add only what is needed of the remaining flour mixture for desired consistency. Bring to a boil after each addition. After the final addition, reduce to medium heat and cook 3 to 5 minutes.

Whole skinned rabbit (~1.5kg in weight) cut into ~5cm cubes. (discard innards and head)
5-6 large garlic cloves
~1/2cup of extra virgin olive oil
5-10 Bay leaves (flavour to taste)
~1/2tbsp of rosemary (fresh rosemary is preferable)
~1tbsp of tomato paste/concentrate
~1tsp of Vegeta
~1L of red wine
Salt & pepper to taste

Steps:

  • Everything is cooked on LOW heat (~1/3 of max). 1. Clean and roughly chop the garlic. 2. Place a large stew pot on low heat and add olive oil (to cover the bottom of the pot), chopped garlic, and small amount (~1/4tsp) of finely chopped rosemary, then slowly heat until the garlic yellows. (~10min) 3. Add the rabbit pieces, mix and cover, allowing them to release their own juices. Mix intermittently to avoid burning. 4. Once the rabbit meat has released its own juices (~15-30min cooking), add bay leaves, small amount of salt (better to add more at end as the wine will also make it slightly salty), tomato paste, the remaining rosemary and Vegeta. Mix and cover. 5. Once the meat juices have almost fully reduced, add red wine to ~85% of the level of rabbit pieces and allow to reduce. Mix and cover. Mix intermittently to avoid burning. Cooking should take ~1.5 hours once the rabbit is covered with wine. If necessary, season with salt and pepper just before completion of cooking. Serve warm with gnocchi.

1 large rabbit
3 garlic cloves
1 onion
8 ounces bacon, in one piece
BOUQUET GARNI
10 sprigs parsley
10 sprigs thyme
1 bay leaf
3 tablespoons olive oil
1 cup red wine
1 cup small onion
1 tablespoon sugar
1 tablespoon butter
12 new potatoes
fresh herb (chervil)
1 teaspoon salt
1 teaspoon pepper

Steps:

  • 1. Chop rabbit into 12 pieces, discard the head and feet.
  • 2. Chop the onion and garlic finely.
  • 3. Slice and dice the bacon.
  • 4. Make a bouquet garni by tying together the parsley, thyme and bay leaf with string.
  • 5. Sear the rabbit pieces in olive oil, until lightly browned, remove from casserole.
  • 6. In the same pan, fry garlic, onion and the bouquet garni.
  • 7. Add the bacon and allow to color lightly.
  • 8. Pour off excess fat.
  • 9. Return rabbit to pan and de-glaze with the red wine.
  • 10. Add 3 cups water, cover and cook for 1 hour 45 minutes.
  • 11. Peel small onions and remove root ends.
  • 12. Rinse well.
  • 13. Cook the onions in water to cover, add sugar, butter, salt and pepper.
  • 14. Cook until all water has evaporated and the sauce is caramelized.
  • 15. Peel and cut potatoes into narrow rectangles.
  • 16. Add potatoes to rabbit stew after the stew has been cooking for 90 minutes.
  • 17. Cook covered until tender.
  • 18. Serve stew with caramelized onions and garnish with chopped chervil.

1 (2 pound) rabbit, cleaned and cut into pieces
1 large onion, chopped
2 cloves garlic, chopped
1 green bell pepper, seeded and sliced into strips

1 large tomatoes - peeled, seeded and chopped
1 ¾ cups chicken stock

Steps:

  • Heat the oil in a skillet over medium-high heat. Fry the rabbit pieces until browned on the outside. Transfer to a soup pot or large saucepan. Add the onion, garlic, green pepper, red pepper and chile pepper to the skillet; cook and stir until onion is transparent. Transfer to the saucepan.
  • Add the tomatoes, chicken stock, salt and pepper to the saucepan, and bring to a boil. Simmer over medium-low heat for about 2 hours. Remove the rabbit pieces with a slotted spoon, and keep warm. Turn the heat up to high under the saucepan, and boil the liquid until it has reduced by half.
  • Return the rabbit pieces to the pan, and stir in the coconut milk. Cook, stirring gently, until heated through. Serve.

3 pounds rabbit meat, cleaned and cut into pieces
½ teaspoon salt
⅓ cup all-purpose flour
½ pound bacon, diced
½ cup finely chopped shallots
1 clove garlic, finely chopped
1 cup dry red wine
1 cup water
1 tablespoon chicken bouillon granules
1 tablespoon currant jelly
10 black peppercorns, crushed
1 bay leaf
¼ teaspoon dried rosemary, crushed
2 teaspoons lemon juice
3 tablespoons water
2 tablespoons all-purpose flour
⅛ teaspoon dried thyme, crushed

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain on paper towels and set aside. Sprinkle rabbit with salt and coat with 1/3 cup flour, shaking off excess. Brown rabbit in remaining bacon fat. Remove from skillet, along with all but 2 tablespoons of the fat, and reserve.
  • Saute shallots and garlic in skillet for about 4 minutes, until tender. Stir in wine, 1 cup water and bouillon. Heat to boiling, then stir in jelly, peppercorns, bay leaf, and rosemary. Return rabbit and bacon to skillet. Heat to boiling, then reduce heat to low. Cover and let simmer about 1 1/2 hours or until rabbit is tender.
  • Remove bay leaf and discard. Place rabbit on a warm platter and keep warm while preparing gravy.
  • To Make Gravy: Stir lemon juice into skillet with cooking liquid. Combine 3 tablespoons water with 2 tablespoons flour and mix together; stir mixture into skillet over low heat. Finally, stir in thyme. Pour gravy over stew and serve, or pour into a gravy boat and serve on the side.

1 rabbit (approx. 2.5-3 lbs) OR 3 lbs Chicken
4 oz. Spanish Serrano ham
1/2 large yellow onion
2 large garlic cloves
1/2 lb. white mushrooms
1 large ripe tomato
Spanish virgin olive oil for sautéing
4 sprigs Italian parsley
2 tsp dried thyme or 1 sprig fresh thyme
6 oz. cognac
8 oz. dry white wine
8 oz. water

Steps:

  • Peel and chop the onion and garlic. Cut the ham into small pieces and set aside. Rinse and cut tomato into small cubes. Rinse all dirt off mushrooms, then trim stems and slice. Chop 2 sprigs of parsley and set apart. Remove rabbit from packaging. Rinse and pat dry. Cut rabbit into 8-10 pieces. Salt and pepper all sides. In a large, heavy-bottomed frying pan, heat 3-4 tbsp olive oil on medium. When hot, sauté onion and garlic. When soft, add the ham cubes. When onion is translucent, remove onion, garlic and ham from pan with a slotted spatula and set aside on plate for later, reserving the oil. Add some olive oil to the same pan and brown the rabbit on both sides. Remove from frying pan. Pour any oil left in frying pan into a large casserole or stew pot. Place rabbit and onion mixture into pot and mix. Add chopped parsley and dried thyme to pot and stir. Place on medium heat. Add the cognac, white wine and water to rabbit and mix. Simmer uncovered for approximately 30 minutes and add chopped mushrooms after 15 minutes. Stir in mushrooms and continue to simmer for another 15 minutes. If necessary, add a bit more water while simmering. Serve with home-fried potatoes or rice. Spanish stews or casseroles such as this are traditionally served with rustic bread, especially in Old Castilla where this regional recipe originates.
