1 1/4 cups Original Bisquick™ mix
1/4 cup butter or margarine, softened
2 tablespoons hot water
4 oz pepper Jack cheese, shredded
1 cup diced smoked spicy andouille sausage (about 6 oz)
1/3 cup thinly sliced green onions
1 cup half-and-half
1 1/2 teaspoons Cajun seasoning
3 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In medium bowl, stir Bisquick mix and softened butter until mixed. (Mixture will be crumbly.) Add hot water; stir until soft dough forms. Press dough in bottom and up side of pie plate.
  • Layer cheese, sausage and green onions over crust in pie plate. In medium bowl, beat half-and-half, Cajun seasoning and eggs with whisk or fork until blended. Pour in pie plate.
  • Bake 32 to 38 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

this is from our local newspaper around 1980 or so. I've kept it that long and never posted it or added it to my regular cookbook. I use this all the time. Adjust the heat to your liking.

1/2 cup finely minced yellow onion
1/2 cup finely minced green onion
1/2 cup finely minced red pepper
2 pickled jalapeno peppers, chopped finely
2 medium garlic cloves, crushed
1 teaspoon adobo seasoning
1/4 teaspoon thyme, crushed
1 tablespoon olive oil
1/2 cup bottled ketchup
3/4 cup crushed tomatoes in puree

Steps:

  • In a heavy saucepan, saute onion, green onions, red pepper, jalapenos, garlic, thyme and olive oil for about 10 minutes until the vegetables have softened.
  • Add ketchup and tomatoes, bring to a simmer and cook 5 minutes, stirring occasionally.
  • Transfer mixture to a bowl, cool and refrigerate until ready to use.
  • The can be refrigerated up to 3 weeks.

1 large onion, finely chopped
1 large green bell pepper, chopped
2 celery ribs, thinly sliced (with leaves)
16 ounces kielbasa or 16 ounces andouille sausages, sliced
2 cups cooked cubed chicken (optional)
1 (28 ounce) can petite diced tomatoes, undrained
1 cup uncooked converted rice
1 cup chicken stock or 1 cup water
2 teaspoons cajun seasoning (I use Salt-Free Cajun Seasoning Salt-Free Cajun Seasoning)
1 lb frozen tailless cooked large shrimp, defrosted
snipped fresh parsley, to garnish
hot sauce, to serve

Steps:

  • Place all the ingredients except the shrimp into the crock pot; stir well to combine.
  • Cover and cook on LOW heat for 4-5 hours, until rice is done and vegetables are tender. (If you have an older model crockpot as I do, cook on HIGH for same amount of time).
  • Stir in the shrimp, cover, and cook for 20-30 minutes until heated through.
  • Garnish with snipped parsley and serve with hot sauce at the table.

½ pound fettuccine
¼ cup butter
2 cloves garlic, minced
¼ cup sliced smoked sausage
2 roma tomatoes, diced
1 cup broccoli florets
½ green bell pepper, chopped
4 mushrooms, sliced
3 green onions, chopped
1 cup cubed cooked chicken breast
½ pound medium shrimp, peeled and deveined
¼ cup white wine
2 teaspoons Cajun seasoning
¾ cup milk
¼ cup grated Parmesan cheese
fresh ground black pepper to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a rolling boil.
  • Boil the fettuccine until cooked through yet firm to the bite, about 8 minutes; drain and transfer pasta to a large serving bowl.
  • Heat the butter and garlic in a large skillet over medium-high heat; stir in the sausage, tomatoes, broccoli, bell pepper, mushrooms and green onion.
