Right now, my favorite combination is ramps and eggs, a particularly satisfying pairing. Sizzled in a little butter, ramps make stellar scrambled eggs, and for not much more effort, a spectacular cheese omelet.

Time 15m

Yield 2 servings

Number Of Ingredients 5

4 large eggs
Salt and pepper
2 tablespoons butter
1/2 cup chopped ramps
1 ounce Gruyère, grated

Steps:

  • Crack the eggs into a bowl, season with salt and pepper and beat lightly with a fork.
  • Heat an omelet pan over medium heat and add the butter. When butter begins to sizzle, add the ramps and cook for 30 seconds or so, until softened. Pour in the eggs and stir to incorporate ramps. As the eggs begin to set, tilt the pan and lift the edges of the omelet to allow any uncooked egg to settle to the bottom of the pan. Cook for no more than a minute, then sprinkle the cheese over the eggs.
  • With a spatula, fold the omelet into thirds. Tip the omelet onto a platter seam side down. Serve immediately.

RAMP OMELET

This is a quick and easy omelet that I make every year when ramps are in season. I usually serve it on a slice of buttered bread. Use as little or as much ramps as you like.

Time 15m

Yield 1

Number Of Ingredients 5

2 large eggs
salt and freshly ground black pepper to taste
2 tablespoons grated Cheddar cheese, or to taste
2 teaspoons ramps - leaves washed, dried, and finely chopped
1 tablespoon butter

Steps:

  • Combine eggs, salt, and pepper in a bowl and whisk until foamy. Mix in Cheddar cheese and ramps.
  • Melt butter in a small skillet over medium-low heat. Pour in egg mixture and let cook for 30 seconds. Lift the edges of the omelet so that the uncooked egg runs under the cooked edges and comes into contact with the hot skillet. Shake and tilt the skillet to move the uncooked egg. Repeat until the top is set, about 5 minutes. Flip and cook on the other side until lightly browned, about 2 minutes.

The ramp, a kind of wild leek that heralds spring, pairs here with eggs for a particularly satisfying meal. Sizzled in a little butter, ramps make stellar scrambled eggs, and for not much more effort, a spectacular cheese omelet. Tips:

  • Choose fresh and tender ramps: Look for ramps with bright green leaves and firm, white bulbs. Avoid any ramps that are wilted or have brown spots.
  • Clean the ramps thoroughly: Rinse the ramps under cold water and pat them dry. Trim off the root ends and any tough outer leaves.
  • Use a variety of cooking methods: Ramps can be cooked in a variety of ways, including sautéing, roasting, grilling, and pickling. Each method will produce a different flavor and texture.
  • Experiment with different flavor combinations: Ramps pair well with a variety of other ingredients, including eggs, bacon, potatoes, cheese, and mushrooms. Feel free to experiment with different flavor combinations to create your own unique ramp omelet.
  • Don't overcook the ramps: Ramps should be cooked until they are tender but still retain their bright green color. Overcooking will make them tough and bitter.

Conclusion:

Ramp omelets are a delicious and easy way to enjoy this unique spring vegetable. With their garlicky flavor and tender texture, ramps add a special touch to any omelet. Whether you are a seasoned chef or a beginner, you can easily make a delicious ramp omelet at home. So next time you see ramps at the market, be sure to pick up a bunch and give this recipe a try.
