VERACRUZ-STYLE RED SNAPPER
I like red snapper for this, but any white, flaky fish will work. By the way, many Veracruz-style fish recipes call for pickled jalapenos, but I think there's plenty of acidity in this from the lime and tomatoes, so I like the fresh pepper a little more.

Tips
- Choose fresh red snapper fillets that are firm to the touch and have a bright, vibrant color. Avoid fillets that are slimy or have a dull color, as these may be old or spoiled. - Use a good quality white wine for the sauce. A dry white wine, such as a Sauvignon Blanc or Pinot Grigio, will work well. Avoid using a sweet white wine, as this can make the sauce too cloying. - If you don't have any white wine on hand, you can substitute chicken broth or vegetable broth. However, the sauce will not have the same depth of flavor. - Don't overcook the red snapper fillets. They should be cooked just until they are opaque and flaky. Overcooking will make them dry and tough. - Serve the red snapper with a variety of sides, such as steamed rice, roasted vegetables, or a fresh salad. Conclusion
Red snapper in white wine sauce with tomatoes is a delicious and easy-to-make dish that is perfect for a weeknight meal. The fish is cooked in a flavorful sauce made with white wine, tomatoes, and herbs. It is served with steamed rice, roasted vegetables, or a fresh salad. This dish is sure to please everyone at your table.
