1 loaf rye cocktail bread
1 (16 ounce) can sauerkraut
1/2 lb corned beef, sliced very thin and quartered
1/2 lb swiss cheese, sliced and quartered
thousand island dressing

Steps:

  • Drain sauerkraut.
  • Place coctail ryes on cookie sheet in single layer.
  • Carefully place corn beef on each slice of rye.
  • Add 1 tablespoon saurerkraut on top of corn beef.
  • Squeeze a dash of thousand island dressing on top of saurkraut.
  • Top with swiss cheese.
  • Preheat oven to 350 degrees.
  • Just before serving slide cookie sheet into oven for 5-8 minutes -- just until cheese has melted.

1/2 cup Thousand Island salad dressing
4 plain bagels, split
2 to 3 large dill pickles, sliced lengthwise
1 pound thinly sliced deli corned beef

  • Spread salad dressing on each bagel half. Top with pickle slices, corned beef and cheese. Place on an ungreased baking sheet. , Broil 6 in. from the heat for 4-6 minutes or until cheese is melted. Cut each into six wedges; serve immediately.

1 package (22 ounces) frozen waffle-cut fries
4 ounces cream cheese, softened
2 cups shredded fontina cheese, divided
1/3 cup Thousand Island salad dressing
3 tablespoons chopped sweet onion
1-1/2 teaspoons prepared horseradish
12 ounces sliced deli corned beef, coarsely chopped
1 cup sauerkraut, rinsed, well drained and chopped
2 tablespoons minced fresh chives

Steps:

  • Prepare waffle fries according to package directions for baking. Meanwhile, in a small bowl, beat cream cheese, 1 cup fontina cheese, salad dressing, onion and horseradish until blended., Remove fries from oven; set oven to 400°. Top each waffle fry with about 1/4 ounce corned beef and 1 teaspoon each cream cheese mixture, sauerkraut and remaining fontina cheese. Bake until cheese is melted, 8-10 minutes. 2 tablespoons thousand island dressing
1 package miniature party rye rounds
1/2 lb pastrami
1/4 lb swiss cheese

Steps:

  • Drain sauerkraut, but do not rinse.
  • Combine sauerkraut with thousand island dressing.
  • Place single layer of rye bread on baking sheet.
  • Place 1 tablespoon of sauerkraut mixture in center of each slice.
  • Top with 2 thin slices of pastrami and 1/2 slice of Swiss cheese.
  • Heat under broiler for 5 or more minutes till cheese melts.

1 pkg appetizer size deli rye bread
1 c prepared thousand island salad dressing
1/2 lb deli style corned beef, sliced thin
1 pkg sauerkraut, from deli or canned, well drained
1/2 lb thinly sliced swiss cheese

  • 1. Preheat oven to 350 degrees. Separate bread slices and spread out on an ungreased cookie sheet.
  • 2. Prepare each bread slice by first spreading with Thousand Island dressing, next place a slice or two of corned beef on top of bread, top with a tablespoon of sauerkraut, finally place a square of Swiss cheese on top of everything.
  • 3. Bake for 10 to 12 minutes or until cheese is melted and bubbly. Serve warm from the oven.

20 slice party cocktail rye bread,flatened
1/2 c thousand island salad dressing( more or less)
2 pkg 2 oz. each budding original corned beef slices
1/2 c sauerkraut, drained,pat dry
12 slice swiss cheese,divided

Steps:

  • 1. Heat oven to 350^. With a rolling pin-flatten each slice of the bread and place on a cookie sheet. Bake in hot oven for 6 minutes then turn over each slice and bake for 6 more minutes. Remove from oven to cool.(leave oven on)
  • 2. Spread slices with thousand island dressing.
  • 3. Top each with a thin slice of corned beef(I used Budding original corned beef-two 2 oz. pkgs.) Fold each piece of meat in half then in half again.
  • 4. Cover each with sauerkraut(about 1 Tablespoon each)
  • 5. Cut the cheese slice to fit the bread and cover the sauerkraut..You can cut an exact size piece- then use pieces to patch remaining slices.
  • 6. Bake in oven for 4 to 5 minutes until cheese is melted. Enjoy!

1 lb refrigerated bread dough (Use Recipe Almost No-Knead Rye Bread)
1/4 cup thousand island dressing
6 ounces thinly sliced deli corned beef
6 ounces swiss cheese, sliced
1 (14 ounce) can sauerkraut, with caraway seeds, well drained

Steps:

  • Make Recipe #387518 for the dough.
  • Prepare 2 large baking sheet pans with parchment or Silpats, set aside.
  • Preheat oven to 375 degrees F.
  • With lightly floured hands quickly shape dough into a ball by streching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter turn as you go.
  • On a lightly floured board, flatten the dough, with hands and rolling pin, into a 1/4 inch thick rectangle, dusting with minimal flour if necessary to keep dough from sticking to the rolling pin. If difficulty is experienced in rolling out the dough, allow it to rest for a few minutes. I've found that pulling the dough with my hands works best.
  • Spread the Thousand Island dressing on the dough, then add corn beef, sauerkraut, and cheese, leaving some of the cheese exposed so that it can help hold the roll together as it bakes.
  • Starting with the long end roll the dough into a log.
  • NOTE: Cut only the number of pieces you want to bake. The rest can be wropped and stored in the refrigerator for up to 5 days, or can be frozen for up to 2 weeks.
  • Using kitchen shears, cut the dough into 1/2 inch pieces.
  • Place them on the prepared sheet, leaving plenty of space for them to expand when they bake.
  • Bake for 15-18 minutes, or until golden brown and the cheese has melted and caramelized a bit.
