RHUBARB AND STRAWBERRY ICE CREAM

Rhubarb and Strawberry Ice Cream image

Unlike many ice cream recipes, this one does not contain eggs.

Yield Makes 1 quart

Number Of Ingredients 7

1 pound trimmed rhubarb, cut into 1/2-inch pieces (about 3 1/2 cups)
3/4 cup plus 2 tablespoons sugar
2 tablespoons water
8 ounces ripe strawberries
1 cup heavy cream
1/2 cup milk
2 tablespoons kirsch

Steps:

  • Place the rhubarb, 1/2 cup sugar, and the water in a saucepan over medium heat. Bring to a boil; reduce heat to medium-low; let simmer, stirring frequently, until rhubarb is very tender and beginning to fall apart, about 12 minutes. Remove from heat; transfer to a bowl; set aside.
  • Place the strawberries in the bowl of a food processor; puree. Strain through a fine sieve or chinois into a bowl; set aside.
  • Scald the cream and milk in a saucepan over medium heat. Do not let boil. Remove from heat, add the remaining 6 tablespoons sugar, and stir until the sugar is dissolved. Allow the mixture to cool to room temperature.
  • In a medium bowl, combine the cooked rhubarb, strawberry puree, cream mixture, and kirsch. Cover with plastic wrap, and chill at least 2 hours or overnight. Freeze in an ice-cream maker according to the manufacturer's instructions.

Tips:

  • Fresh and ripe ingredients: Use fresh, ripe rhubarb and strawberries for the best flavor. If you can't find fresh rhubarb, you can use frozen rhubarb that has been thawed and drained.
  • Chill the ingredients before churning: Make sure the cream, milk, and sugar mixture is well chilled before churning. This will help the ice cream freeze faster and smoother.
  • Churn the ice cream until it reaches the desired consistency: The churning time will vary depending on the type of ice cream maker you are using. Churn the ice cream until it reaches a soft-serve consistency, then transfer it to a freezer-safe container and freeze it for at least 4 hours before serving.
  • Add mix-ins after churning: If you want to add mix-ins, such as chopped nuts, chocolate chips, or fruit, do so after the ice cream has been churned. This will prevent the mix-ins from freezing solid.

Conclusion:

Rhubarb and strawberry ice cream is a delicious and refreshing treat that is perfect for summer. It is easy to make at home with just a few simple ingredients. With its sweet and tart flavor, this ice cream is sure to be a hit with everyone. So next time you are looking for a delicious and refreshing dessert, give this rhubarb and strawberry ice cream a try.
