1 pound day-old white bread loaf cut in cubes
4 cups water
1/2 pound chicken livers
1/2 cup butter - (1 stick)
1 tablespoon salt
1 onion chopped
1/2 cup chopped parsley
1 1/2 cups chopped celery leaves
2 1/2 cups chopped mushrooms
1 teaspoon garlic powder or 1 minced garlic clove
1 teaspoon dried oregano
1 teaspoon dried basil
1 egg slightly beaten
1 tablespoon minced fresh sage

Steps:

  • Soak bread in water. Cook chicken livers in butter over medium heat, mashing livers while cooking. Add salt, onion, parsley, celery leaves and mushrooms and continue cooking until chicken livers are cooked and no longer pink and onion is soft. Add garlic powder, oregano and basil. Squeeze water from wet bread and place bread in large bowl. Add egg and sage and mix well. Add cooked liver mixture. Turn into greased 13- by 9-inch baking dish, cover tightly with foil, and bake at 375 degrees 30 minutes. Remove foil and bake another 15 minutes. This recipe yields 9 cups. Each 1/2-cup serving: 159 calories; 618 mg sodium; 69 mg cholesterol; 7 grams fat; 20 grams carbohydrates; 5 grams protein; 1.63 grams fiber.

1 pound chicken livers
1 turkey liver, chopped
Salt to taste, if desired
Freshly ground pepper to taste
3/4 pound fresh mushrooms
2 tablespoons butter
1/2 cup finely chopped onion
1/3 cup corn oil
1/4 cup dry sherry wine
4 1/2 cups cooked rice (see recipe)
1 egg, lightly beaten

Steps:

  • Preheat the oven to 350 degrees.
  • Pick over the livers. Cut away and discard the tough connecting membranes. Cut the chicken and turkey livers into small cubes. Sprinkle with salt and pepper and set aside.
  • Cut the mushrooms into quarters and slice them. There should be about six cups.
  • Heat the butter in a heavy skillet and add the onion. Cook, stirring, until wilted. Sprinkle with salt and pepper. Add the mushrooms and cook, stirring, until mushrooms give up their liquid. Continue cooking until the liquid evaporates.
  • Heat the oil in another heavy skillet and add the livers. Cook over very high heat, stirring frequently, about one and a half minutes.
  • Add the livers to the mushrooms. Stir and cook briefly. Add the wine and cook briefly over high heat until the wine evaporates. Add the rice and stir. Add the egg, stirring. Let cool.

1 tablespoon butter
1 teaspoon parsley

1 lb chicken liver, cut in half

This is the only stuffing I've ever eaten all my life - and the thing is, I have never even wanted to try another! This is my mom's recipe. Mothers give daughters good lessons in life - this is one of the best my mom gave me. I have not provided a cook time - it takes as long as your bird takes, ours always has.

3 tablespoons butter
1 lb ground beef
1 large onion, chopped fine
1 celery rib, chopped fine
1 1/2 cups long-grain rice
1 turkey liver, chopped fine (optional)
2 Granny Smith apples, peeled and grated coarse
3/4 cup pine nuts
3/4 cup slivered almonds
3/4 cup sultana raisin
1 1/2 teaspoons cinnamon
2 lbs chestnuts, cooked, cleaned and chopped coarse (procedure follows)

Steps:

  • Melt butter in a large saucepan over medium heat, add onion and saute until translucent, about 3 minutes. Turn heat up to high and add ground beef. Cook until meat is browned well, stir in celery and cook 5 minutes longer. Stir in rice and turkey liver and cook 3 minutes. Add all remaining ingredients, season generously with salt and pepper.
  • Your bird is ready to be stuffed!
  • To prepare chestnuts: I do them in the pressure cooker. Rinse chestnuts and put them in the cooker. Add enough water to cover by a good 2 inches and throw in 2 tblsps salt (this will be drained off anyway- but gives the chestnuts better flavour). Boil for 5 minutes (after pressure starts). Turn off heat and leave on element 15 minutes longer. Drain.
  • When cool enough to handle, cut off'nib' with a small, sharp knife and peel. Get the papery stuff off too. This is not so easy- some chestnuts peel easer than others, but they are so good and this is so totally worth it!
  • If you don't have a pressure cooker, you can boil them in a regular pot for about 25 minutes.
  • You could also use the vacuum-packed, cleaned chestnuts available, but I don't know if they'd be as tasty. I would guess that just over 1 lb of cleaned, cooked chestnuts would equal a 2 lb, uncleaned weight.

1/4 pound mushrooms, cut into half-inch cubes, about 2 cups
Salt to taste, if desired
Freshly ground pepper to taste

Steps:

  • Prepare the wild rice and set it aside.
  • Preheat the oven to 350 degrees.
  • Finely chop the liver and set it aside.
  • Toast the chopped pecans lightly in a skillet.
