Steps:
- 1. Place rice and milk in large pot and bring to simmer. Add the lemon peel and sugar. Cook over low heat, stirring occasionally until the rice is cooked - about 25 minutes.
- 2. Remove from heat, let cool. Add egg yolks one at a time, mixing well after each addition. Return rice mixture to stove and bring to a boil, stirring constantly.
- 3. Pour into serving dish, chill for at least 4 hours. Sprinkle cinnamon on top before serving.
Tips:
- Use high-quality rice. Short-grain or medium-grain rice is best for rice pudding, as it absorbs liquid well and cooks evenly. Avoid using long-grain rice, as it can become mushy.
- Cook the rice in milk. This will give the rice pudding a creamy and rich flavor. You can use whole milk, low-fat milk, or even almond milk or soy milk.
- Add sugar and spices to taste. The amount of sugar you add will depend on your personal preference. You can also add spices like cinnamon, nutmeg, or vanilla extract to enhance the flavor of the rice pudding.
- Cook the rice pudding until it is thick and creamy. This will usually take about 30 minutes, but it may take longer depending on the type of rice you are using.
- Serve the rice pudding warm or cold. Rice pudding is delicious served warm, but it can also be chilled and served cold. You can also top the rice pudding with whipped cream, fruit, or nuts.
Conclusion:
Rice pudding is a delicious and versatile dessert that can be enjoyed by people of all ages. It is easy to make and can be customized to your own taste. Whether you like it simple or fancy, rice pudding is a classic dessert that is sure to please.
