Rigatoni al Segreto (Rigatoni with Secret Sauce) image

This Rigatoni al Segreto recipe was the most closely guarded secret at Gino's, one of New York City's most famous Italian restaurants. When it closed, the recipe got out. But I think the amount of butter was way too low. So here's my version.

Tips:

  • For a richer flavor, use ground turkey with a higher fat content.
  • To make the sauce more spicy, add a diced jalapeño pepper or a pinch of cayenne pepper.
  • If you don't have any chipotle peppers in adobo, you can substitute 1 teaspoon of chili powder and 1/2 teaspoon of smoked paprika.
  • Be sure to cook the ground turkey until it is browned all the way through.
  • Don't overcrowd the pan when cooking the ground turkey. If you do, it will steam instead of brown.
  • Season the sauce to taste with salt and pepper.
  • Serve the pasta with a sprinkle of grated Parmesan cheese or crumbled queso fresco.

Conclusion:

This easy and flavorful pasta dish is perfect for a weeknight meal. It's packed with protein and vegetables, and it's sure to be a hit with the whole family.
