1/2 teaspoon salt
1 cup shredded part-skim mozzarella cheese, divided

2 large eggs
1 pound ground beef
1/2 cup chopped onion
1 can (8 ounces) tomato sauce
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
1 cup chopped green pepper
2 cans (4 ounces each) mushroom stems and pieces, drained

8 small zucchini, cut into 1/4 inch rounds
1 onion, sliced
6 tomatoes, sliced
½ pound thinly sliced pepperoni
1 (16 ounce) package small curd cottage cheese
¼ pound shredded Cheddar cheese
¼ pound shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Cover bottom of baking dish with half of the zucchini slices. Layer with half of the onion rings, tomato slices and pepperoni slices. Sprinkle with half of each of the cottage cheese, Cheddar cheese and mozzarella cheese. Repeat layers.

6 medium yellow squash, chopped fine
1/2 cup onion, chopped
1 teaspoon salt
3/4 cup cheddar cheese, shredded
2 eggs
1/3 cup milk
1 cup Ritz cracker, crushed
1/2 cup butter, melted

Steps:

  • Remove ends of squash and discard. Chop or cut squash into small fine pieces. Add salt to water and boil squash and onion until tender for approximately 15 minutes. Drain well.
  • In a medium size bowl, mix cheese with squash mixture. Beat eggs and stir into milk. Add to squash mixture.
  • Pour one-half of squash mixture into a 2 quart casserole baking dish. Sprinkle 1/2 cup of cracker crumbs over and pour 1/2 of melted butter. Pour remaining squash mixture and repeat with remaining crumbs and melted butter on top.
  • Bake in a 350 degree oven for 25 minutes.

1 cup sour cream

  • Wash zucchini; boil whole for 5 to 10 minutes--no more.

This ritz cracker zucchini cheddar casserole is truly addicting! You can use yellow squash and or zucchini. I have made it for gatherings and people who don't usually like zucchini, love it!

4 cup(s) very thinnly sliced zucchini
1/2 cup(s) diced sweet onion
1 - sleeve (about 35 round crackers, like ritz crackers)
1 cup(s) shredded cheddar cheese
2 - eggs, beaten
3/4 cup(s) milk
3 tablespoon(s) butter
- salt and pepper to taste

Steps:

  • In a large frying pan, saute, in butter, zucchini and onion till soft and transparent. Add salt and pepper to taste. Set aside.
  • I a large bowl, mix crushed crackers and cheddar cheese. Place 1/2 of cracker/cheddar mixture into sauteed zucchini and onions. (reserving the other 1/2 as the topping.)
  • In a separate medium bowl, whisk the eggs and milk well. Pour this into the zucchini mixture and blend well. I use the same big frying pan to mix all these steps.
  • Place zucchini mixture into a 2 quart baking dish. Top with remaining cracker/cheddar mixture.
  • Bake in a preheated oven at 400 degrees for about 20-25 minutes, until golden brown on top.

  • For a crispier topping, use Panko breadcrumbs instead of regular breadcrumbs.
