GRILLED CHICKEN BREAST WITH GINGER AND SOY
Steps:
- Combine the 1 cup soy sauce, 1/4 cup olive oil, 2 tablespoons sesame oil, half of the lime juice, ginger, and garlic, and 1/4 cup cilantro in the bottom of each of 2 large freezer bags. Put 2 chicken breasts in each bag and get them coated with the marinade. Then set the bags on a work surface, force the air out and seal them. Allow chicken to marinade for 1 hour. You can also freeze the chicken right in the marinade at this point. To do so fold each bag over the chicken 3 times, tape them well, and date them. Put it in the freezer for up to 2 months.
- Place a large grill pan on 2 burners over medium-high heat, or preheat an outdoor gas or charcoal grill. Fold a few paper towels into a thick square. Blot some oil on the paper towels and then carefully and quickly wipe the ridges of the gill pan or the hot grates of the grill to make a non-stick surface.
- Remove the chicken breasts from the marinade and season with salt and pepper. Lay the chicken on the hot grill and cook 3 to 5 minutes on each side until charred and firm. Serve with the sesame noodles and cucumber pickles.
ROAST CHICKEN WITH MAPLE-SOY GLAZE
Steps:
- Preheat oven to 375°F. Whisk maple syrup, soy sauce, rice vinegar, and hot pepper sauce in small bowl for glaze. Simmer Sherry in small saucepan until reduced to 1/2 cup, about 3 minutes.
- Run hands under chicken skin to loosen; rub most of butter under skin over breast and thighs. Rub remaining butter over outside of chicken. Sprinkle cavity with salt and pepper. Place chicken in roasting pan. Squeeze some juice from each orange piece over chicken. Stuff cavity with orange pieces, ginger, and garlic. Tuck wing tips under. Pour Sherry over chicken.
- Roast chicken 20 minutes. Add 1/4 cup water to pan. Roast 15 minutes longer. Brush chicken with glaze. Roast chicken until thermometer inserted into thickest part of thigh registers 170°F, brushing chicken with glaze every 10 minutes, about 40 minutes longer. Tilt chicken to allow juices from cavity to run into roasting pan. Transfer chicken to platter. Let stand 10 minutes (internal temperature will rise).
- Spoon fat from surface of pan juices. Add any remaining glaze to pan juices. Place roasting pan over 2 burners; bring sauce to boil. Serve sauce alongside chicken.

SPICY ROASTED CHICKEN THIGHS WITH MISO AND GINGER
Overall, this is a tangy, slightly sweet and salty recipe with a pleasant kick of heat from the chili sauce. I love chicken thighs; they are just so forgiving, and take so well to so many different types of seasoning.

SOY ROAST CHICKEN WITH GINGER AND SPRING ONION
A beautiful Chinese-flavoured roast from Ross Dobson's "Chinatown" book. This was perfect, with dark roasted skin over juicy flesh and a beautiful dressing - plus it's fun to hear the dressing sizzling when you pour the hot oil onto it! A very easy, foolproof roast - I rarely can roast chickens well in my dodgy over, but this one was perfect. Ideally put the chicken into marinade the night before roasting it.

Tips:
- Choose the right chicken: A whole chicken is ideal for this recipe, but you can also use chicken breasts or thighs. If you're using a whole chicken, make sure it's free-range and organic for the best flavor.
- Prepare the ginger and soy sauce marinade: The marinade is what gives this chicken its incredible flavor. Make sure to use fresh ginger and soy sauce, and don't skimp on the garlic and honey.
- Marinate the chicken for at least 30 minutes: The longer you marinate the chicken, the more flavorful it will be. If you're short on time, you can marinate it for as little as 15 minutes, but the longer the better.
- Roast the chicken at a high temperature: This will help to create a crispy skin and juicy meat. Make sure to preheat your oven to the correct temperature before roasting the chicken.
- Baste the chicken with the marinade while it's roasting: This will help to keep the chicken moist and flavorful. Baste the chicken every 15-20 minutes, or more often if you're using a whole chicken.
- Let the chicken rest before carving: This will help the juices to redistribute throughout the meat, resulting in more tender and flavorful chicken.
Conclusion:
This roast chicken with ginger and soy sauce is a delicious and easy-to-make dish that's perfect for any occasion. The ginger and soy sauce marinade gives the chicken a wonderfully flavorful and aromatic flavor, while the roasting process creates a crispy skin and juicy meat. Serve this chicken with your favorite sides, such as rice, vegetables, or mashed potatoes, for a complete and satisfying meal.
