ROASTED CARROT AND CAULIFLOWER CURRIED SOUP

Roasted Carrot and Cauliflower Curried Soup image

This restaurant-quality soup is hearty and very tasty! I didn't have onions at home when I made this. Although the soup turned out really flavorful without them, I will probably add an onion or two next time I make it. Garnish with basil, wonton noodles, and sour cream.

CURRIED ROAST CAULIFLOWER SOUP

Curried Roast Cauliflower Soup image

Cauliflower takes well to curry seasonings and by roasting it first you extract maximum flavour from the florets. Serve this soup in small portions as a first course for a special dinner or on its own with naan bread for a simple supper. Garnish each bowl of soup with a swirl of Coriander Chutney recipe # 345872. This recipe is from the Fall 2008 issue of the LCBO's Food and Drink Magazine.

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 10

1 medium head cauliflower (about 7 cups of florets)
1/4 cup vegetable oil
salt
1 cup sweet onion, chopped
1 tablespoon gingerroot, finely chopped
2 teaspoons garlic, chopped
2 teaspoons curry powder
4 cups chicken stock
2 teaspoons lemon juice
salt and pepper

Steps:

  • Preheat oven to 450°F.

Tips:

  • Choose the right carrots and cauliflower: For the best flavor and texture, choose fresh, firm carrots and cauliflower. Avoid any vegetables that are bruised or wilted.
  • Roast the vegetables before adding them to the soup: Roasting the vegetables brings out their natural sweetness and flavor. It also helps to caramelize the sugars in the vegetables, which gives the soup a rich, golden color.
  • Use a good quality curry powder: The curry powder is the key ingredient in this soup, so it's important to use a good quality one. Look for a curry powder that is fragrant and flavorful. If you can't find a good quality curry powder, you can make your own by combining ground cumin, coriander, turmeric, and chili powder.
  • Don't be afraid to experiment with different toppings: This soup is delicious on its own, but it's also great with a variety of toppings. Some popular toppings include chopped cilantro, yogurt, croutons, and roasted nuts.

This roasted carrot and cauliflower curried soup is a delicious and healthy meal that is perfect for a cold winter day. The soup is easy to make and can be tailored to your own taste preferences.
