1 large cauliflower (chopped into florets)
1/4 cup butter (softened)
3 cloves garlic (minced)
1/4 cup parmesan cheese (freshly grated)
3 tablespoons cream cheese
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Boil cauliflower in salted water for 10 minutes or until fork tender. Remove and drain. Cover with a lid and set aside.
  • In the same pot, heat the butter over medium high heat. SauteĢ garlic until fragrant.
  • Add the cooked cauliflower into a food processor and pulse several times until smooth and creamy.
  • Transfer the cauliflower mash into the pot with the garlic. Stir through the parmesan cheese, cream cheese, salt, and pepper.

A creamy soup with some "kick". It's from the Noble Pig Vineyard & Winery collection of recipes...and it is DELICIOUS!!

1 head cauliflower or 2 1/2-3 lbs cauliflower, core removed & cut into florets
2 russet potatoes or 1 1/2 lbs russet potatoes, peeled & cubed
2 1/2 tablespoons olive oil, divided
kosher salt (to taste)
ground pepper (to taste)
1/2 cup chopped shallot
1 tablespoon minced garlic
1/2 teaspoon dried thyme
4 cups chicken stock
1 cup heavy cream
2 cups shredded monterey jack cheese
1/2 cup red hot buffalo wing sauce (I used Frank's)

Steps:

  • Preheat oven to 400 degrees F. Prepare a large rimmed baking tray with foil and spray with cooking spray. In a large bowl, toss cauliflower & potatoes with the 2 Tablespoons olive oil, salt & pepper. roast in the over for 20 minutes or until tender.
  • Meanwhile, in a large Dutch oven over medium heat, saute shallot in remaining 1/2 Tablespoon olive oil until soft about 3-4 minutes. Add garlic & thyme, cooking until fragrant, about 30 seconds.
  • Pour in chicken stock, roasted cauliflower and potatoes. Bring to a boil and simmer for about 15 minutes, uncovered.
  • Puree in blender in batches. Add puree back to the pot and warm the soup to a slight simmer. Add cream, cheese and buffalo sauce. Stir until cheese is melted and soup is warmed through.
  • Drizzle a little Frank's on top for an extra kick -- ENJOY!

24 ounces Simply Potatoes Garlic Mashed Potatoes
1 1/4 cups gouda cheese, grated fine
2 eggs
2 tablespoons milk
1 cup panko breadcrumbs, any flavor

Steps:

  • Prepare Simply Potatoes as directed on package. Set aside to cool slightly.
  • Preheat oven to 400.
  • Line a baking sheet with parchment paper.
  • In medium mixing bowl add 1 egg, 1/2 teaspoon both salt and pepper. Whisk slightly then add cooled potatoes and grated cheese. Gently combine all ingredients.
  • In seperate bowl whisk 1 egg and milk.
  • In pie pan add panko crumbs.
  • Shape mixture into aprox 40 balls. Dip in egg/milk then coat with panko crumbs.
  • Place on prepared baking sheet.
  • Bake 15-20 minutes or unti golden brown.
  • Serve warm .

1/2 large head cauliflower, broken into florets (about 8 cups)
1/2 cup fat-free buttermilk
1 lb yukon gold potato
salt
1/2-3/4 cup low-fat milk
pepper
1 tablespoon butter
2 scallions, chopped

Steps:

  • Peel the potatoes, quarter lengthwise, and slice into 1/2-in thick pieces.
  • Steam cauliflower 15 minutes. Transfer to a food processor, add the buttermilk and 1/4 cup of milk, and puree until very smooth, about 2 minutes.
  • Meanwhile, place potatoes in a saucepan, add cold salted water to cover potatoes about 2 inches, bring to a boil, reduce heat, and simmer until tender, about 15 minutes. Drain, return to the potatoes to the saucepan, and heat over medium heat for 1-2 minutes to dry. Mash with a potato masher.
  • Add the cauliflower puree, 1/4 cup milk, and a little bit of salt and pepper to the saucepan with the mashed potatoes. Stir to blend, and heat over medium-low heat, adding more milk as needed for a creamy consistency.
  • Stir in the butter and the scallions.
  • Serve.
