Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
1 12-ounce jar roasted red peppers, drained and rinsed

Number Of Ingredients 8

1 red bell pepper
1 tablespoon olive oil
2 cloves garlic, chopped
1 green onion, chopped
4 cups frozen peas, thawed
2 cups vegetable broth
½ cup chopped fresh basil
salt and freshly cracked black pepper to taste

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.

Cut the pepper in half and remove seeds; strip and discard skin from pepper, chop, and set aside.
  • Heat olive oil in a saucepan over medium heat. Stir in the garlic; cook and stir until fragrant, about 30 seconds. Add green onion and roasted red bell pepper; cook and stir for 3 minutes. Stir in peas and cook for another 3 minutes.
  • Pour in vegetable broth, bring to a boil, reduce heat to low, and simmer until peas are tender, about 8 minutes. Stir in basil, remove from heat, and let cool. Pour pea mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return soup to pot over medium heat and cook until heated through; season with salt and cracked black pepper to taste.

I have made this several times and it is YUMMY! From one of my favorite cookbooks, The Big Book of Soups & Stews by: Maryanna Vollstedt. Prep time does not included roasting your own peppers on the grill or under the broiler. Add about 15 minutes for that.

Tips:

  • To save time, use pre-roasted red peppers from a jar. If using fresh peppers, roast them yourself by placing them on a baking sheet and broiling them for 10-15 minutes per side, or until blackened and tender. Once roasted, remove the peppers from the oven and place them in a paper bag to steam for 10 minutes. This will make them easier to peel.
  • For a spicier soup, add a teaspoon of chili powder or a chopped jalapeño pepper. If you don't like spicy food, you can omit the jalapeño pepper and reduce the amount of chili powder.
  • To make the soup vegan, use vegetable broth instead of chicken broth. You can also omit the cheese garnish.
  • Serve the soup with a side of crusty bread, crackers, or tortilla chips for dipping.

Conclusion:

This roasted red pepper and black bean soup is a delicious and easy-to-make meal that's perfect for a weeknight dinner. It's also a great way to use up leftover roasted red peppers. The soup is packed with flavor and nutrients, and it's sure to be a hit with your family and friends.
