This is the easiest chicken recipe with loads of flavors! It creates it own juice (or broth) so it won't be dry. You can spice it to your tastes and add any vegetables you like. It's great with rosemary roasted potatoes or saffron rice on the side.

Tips:

  • Choose the right chicken: A whole chicken is the best option for this recipe, as it will give you the most flavor. If you're using chicken breasts or thighs, be sure to bone and skin them before cooking.
  • Make sure your vegetables are fresh and evenly sized: This will help them cook evenly. If your vegetables are too large, cut them into smaller pieces.
  • Don't overcrowd the pan: If you overcrowd the pan, the vegetables will steam instead of roasting. Make sure there is enough space between the chicken and vegetables so that they can all get crispy.
  • Roast the chicken and vegetables at a high temperature: This will help them brown and caramelize. If you're using a convection oven, you can roast the chicken and vegetables at a slightly lower temperature.
  • Don't forget the herbs and spices: Herbs and spices will add a lot of flavor to the chicken and vegetables. Be generous with the rosemary, thyme, and garlic.
  • Let the chicken and vegetables rest before carving: This will help the juices redistribute throughout the meat and vegetables, making them more tender and flavorful.

Conclusion:

Roasted rosemary chicken and vegetables is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The chicken is roasted to perfection, and the vegetables are tender and flavorful. This recipe is also a great way to get your kids to eat their vegetables. Serve the roasted rosemary chicken and vegetables with your favorite sides, such as mashed potatoes, rice, or roasted potatoes. You can also add a green salad or some steamed vegetables to make a complete meal.
