2 lavash rectangles
2 1/2 tablespoons grainy mustard
1 pound sliced pastrami
1 cup coleslaw (about 6 ounces)
1/2 pound Swiss cheese

Steps:

  • To assemble: With a short end of a lavash facing you, spread about 2 slightly rounded teaspoons of the mustard over the entire lavash. Cover with a quarter of the pastrami, followed by the Swiss cheese and a quarter of the coleslaw, and roll the wrap away from you. Complete the wraps with the remaining ingredients. Or, if you prefer, prepare all at once, assembly -- line style. Cut in half on the bias.

4 slices pumpernickel or rye bread
2 tablespoons Thousand Island salad dressing
6 ounces sliced deli smoked turkey
1/2 cup sauerkraut, rinsed and well drained
2 slices Swiss cheese
2 teaspoons butter, softened

Steps:

  • Spread two slices of bread with salad dressing. Layer with turkey, sauerkraut and cheese; top with remaining bread. Butter the outsides of sandwiches., In a large skillet, toast sandwiches for 3-4 minutes on each side or until heated through.

In this reinvented twist on a classic reuben sandwich, turkey pairs up with melted cheese and rye bread, with a mustard-laced take on coleslaw supplanting sauerkraut.

2 teaspoons unsalted butter, softened
2 slices rye bread
2 tablespoons Russian Dressing
1 ounce thinly sliced Swiss cheese
4 thin slices cooked turkey
3 tablespoons Tangy Cabbage Slaw
2 dill-pickle sandwich slices

Steps:

  • Heat a grill pan or a cast-iron skillet over medium heat. Spread butter on 1 side of each slice of bread. Flip bread over, and spread Russian dressing on the other side of each slice. Place half of the cheese on top of dressing on 1 slice. Top with turkey, cabbage slaw, and pickles. Top with remaining cheese, then the second slice of bread, buttered side up.
  • Place on grill pan, and cook, pressing down occasionally with a spatula, until golden brown and cheese has melted, 3 to 4 minutes per side. (Cover with a heatproof bowl to encourage cheese to melt; use caution when removing.) Cut sandwich in half, and serve immediately.

My kids and the rest of their rowing team love these wraps. At their regattas, which last from sun-up to sun-down, we moms have to feed over 100 people (50 'starving' teenagers and their families). We assemble the wraps outside on portable tables and mix the coleslaw in a huge 20 gallon storage container! Several moms form an assembly line to build the wraps. We then roll them in paper and store them in coolers for lunch and snacking all day long. They hold up well and the leftovers are still good the next day!

2 cups shredded cabbage
1 cup shredded carrots
½ cup thousand island salad dressing
3 tablespoons cider vinegar
4 (10 inch) whole wheat tortillas
¼ cup thousand island salad dressing
4 romaine lettuce leaves
12 ounces sliced deli turkey meat
8 thin slices Gruyere cheese or Swiss cheese

Steps:

  • Combine the cabbage, carrots, 1/2 cup salad dressing, and cider vinegar in a large bowl.
  • Spread each tortilla with 1 tablespoon salad dressing (optional). Line each wrap with one lettuce leaf and arrange 3 ounces of turkey down the center of the lettuce. Place 2 cheese slices on top of the turkey. Top with 3/4 cup of the cabbage mixture.
  • Fold the bottom of the tortilla snugly over the filling, then fold in the left and right edges. Roll the wrap up to the top edge, forming a tight cylinder. Repeat with the remaining ingredients. Wrap in paper sandwich wrappers or plastic wrap, and store in refrigerator until serving. Before serving, cut each wrap in half across the middle with a slightly diagonal cut.

1 cup shredded carrot
2 tablespoons cider vinegar
6 tablespoons thousand island dressing
4 (8 inch) multigrain tortillas or 4 (8 inch) flour tortillas
4 leaves romaine lettuce or 4 leaves butter lettuce
8 thin slices turkey (can use combination of both) or 8 pastrami (can use combination of both)
8 thin slices swiss cheese

Steps:

  • In a bowl, toss coleslaw mix, carrots, cider vinegar and 2 tablespoons of the dressing until combined.
  • Spread each wrap with 1 tablespoon of the remaining dressing. Line each wrap with a piece of lettuce. Place 2 slices of turkey or pastrami on top of dressing in center. Place 2 slices of cheese on top of turkey. Top with about 1/3 cup of the coleslaw. Roll up burrito-style, tucking in sides.

1/8 teaspoon caraway seeds
1/2 cup sauerkraut, rinsed and well drained
1 slice Swiss cheese
Green pepper rings, optional

Steps:

  • Place toast on an ungreased baking sheet; spread with mustard. Arrange turkey over mustard. Sprinkle with caraway seeds; top with the sauerkraut and cheese. , Broil about 4-6 in. from the heat for 3 minutes or until cheese is bubbly and lightly browned. Top with pepper rings if desired.
