TEA ROOM SCONES

I got this recipe from a local tea room. They can be made as recipe states or with white chocolate and cranberries. You can also add a number of things to the dry ingredients to make your own version such as chocolate chips etc.

Time 27m

Yield 12 serving(s)

Number Of Ingredients 7

1 3/4 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons unsalted butter, chilled and cubed
1/2 cup miniature semisweet chocolate chips (see note)
3 tablespoons orange juice

Steps:

  • Preheat oven to 400 degrees.
  • Spray a baking sheet with nonstick cooking spray.
  • In a large bowl, whisk together the flour, sugar, baking powder and salt.
  • With a pastry blender or a large fork, cut in the butter until the mixture resembles coarse crumbs.
  • Stir in the chocolate chips (or whatever you choose).
  • Mix in the orange juice to form a dough. Turn out the dough on a floured surface. Pat or roll into a 9" circle about 1/2" thick.
  • With a 2 1/2" fluted biscuit cutter, cut out 12 scones, pushing the scraps together for the last few.
  • Transfer the scones to the baking sheet. Bake until golden brown, about 12 minutes. Cool on racks.
  • Note: I have used white chocolate chips and dried cranberries and I prefer either or both to milk chocolate in these.

Tips:

  • Use cold butter and heavy cream. This will help to create a light and flaky scone.
  • Do not overwork the dough. Overworking the dough will make the scones tough.
  • Use a sharp knife to cut the scones. This will help to create clean edges.
  • Bake the scones in a hot oven. This will help to create a golden brown crust.
  • Serve the scones warm with clotted cream and jam.

Conclusion:

Scones are a delicious and versatile treat that can be enjoyed for breakfast, lunch, or tea. With a few simple ingredients and a little bit of time, you can create scones that are sure to impress your family and friends.
