Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 5

1 pound medium asparagus, tough ends trimmed
Extra-virgin olive oil
Sea salt and cracked black pepper
1/2 lemon, sliced paper thin
1 bay leaf

Steps:

  • Preheat the oven to 350 degrees F and arrange an oven rack in the middle of the oven. Get yourself a paper bag large enough to hold the asparagus comfortable. Throw the asparagus in there and drizzle the outside of the bag with olive oil to keep the bag from burning. Sprinkle the asparagus with the salt and cracked pepper and toss in the lemon slices and bay leaf. Close the bag, folding it over several times and creasing the folds well to hold the steam in. Put the pan on a baking sheet, drizzle it with more olive oil, stick it in the oven, and bake for 20 minutes.
  • Take the baking sheet out of the oven and set it on top of the stove. Set a serving plate next to the stove. Using a kitchen towel or a pair of kitchen tongs, raise the bag over the plate, open the bag, and slide the asparagus out onto the plate. Drizzle with a little more olive oil and serve hot.

Mustardy Salmon in a Packet with Asparagus Recipe image

Delicate asparagus. Flaky salmon. Jaunty mustard. Just wrap them all up in a foil-parchment packet and bake. What comes out is perfectly steamed fish, tender asparagus, and a punchy sauce. The best part? It's ready in twelve minutes with no clean up.

Provided by Kerry Saretsky

Categories     Mains

Time 20m

Yield 4

Number Of Ingredients 7

4 tablespoons crème fraîche
4 tablespoons dry white wine
2 tablespoons Dijon mustard
2 tablespoons whole grain mustard
2 bunches (32 stems) asparagus, trimmed and cut in thirds
Kosher salt and freshly ground black pepper
4 boneless skinless salmon filets (about 6 ounces each)

Steps:

  • Preheat the oven to 400°F. Whisk together the crème fraîche, wine, and mustards. Set aside.
  • Tear off four large rectangles of aluminum foil, and four slightly smaller rectangles of parchment. Place the parchment on top of the foil. On each sheet of parchment, place a quarter of the asparagus and season with salt and pepper. On top of each pile of asparagus, place one piece of salmon, and season the fish with salt and pepper. Divide the mustard sauce among the four pieces of salmon, pouring it over the top. Finally, fold the packets of foil so they are sealed up tight with the parchment and fish within. Bake packets on a large rimmed baking sheet in a single layer until fish is cooked through, about 12 minutes. Open packets and serve.

Tips:

  • Choose fresh, high-quality salmon and asparagus: Look for salmon that is firm to the touch and has a vibrant color. Asparagus should be bright green and have tightly closed tips.
  • Season the salmon and asparagus simply: Salt, pepper, and lemon juice are all you need to bring out the natural flavors of the fish and vegetables.
  • Use a sturdy parchment paper or aluminum foil pouch: Make sure the pouch is large enough to hold the salmon and asparagus comfortably.
  • Seal the pouch tightly: You want to create a steamy environment inside the pouch so that the salmon and asparagus cook evenly.
  • Cook the salmon and asparagus in a preheated oven: This will help to ensure that the fish and vegetables cook through evenly.
  • Be careful when opening the pouch: The steam inside the pouch will be hot, so use caution when cutting it open.

Conclusion:

Salmon and asparagus in a bag is a delicious, healthy, and easy-to-make meal. It's perfect for busy weeknights or when you're entertaining guests. The salmon and asparagus are cooked to perfection in a flavorful broth, and the vegetables retain their vibrant colors and nutrients.
