3 tablespoons half-and-half
2 teaspoons fresh lemon juice
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh tarragon
1 large English cucumber, cut into 30 (1/3-inch-thick) slices, or 30 small whole grain crackers

- Use fresh, high-quality ingredients for the best flavor and texture. - Chill the mousse for at least 30 minutes before serving to allow the flavors to meld and firm up. - For a smoother mousse, use a food processor or blender to blend the ingredients until very smooth. - If you don't have crème fraîche, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of heavy cream and letting it sit for 10 minutes. - To make the mousse ahead of time, prepare it up to 3 days in advance and store it covered in the refrigerator. Bring it to room temperature for 30 minutes before serving. - For a more elegant presentation, pipe the mousse onto the canapés using a pastry bag fitted with a star tip. - Garnish the canapés with fresh herbs, such as dill or chives, or smoked salmon.
