2 lbs salmon
3 tablespoons olive oil
1/3 cup basil pesto
3/4 cup half-and-half
3/4 cup heavy cream
1/2 cup parmesan cheese, grated

Steps:

  • Season salmon if you choose and either sear in a pan, then place in oven to cook until finished or grill. Keep warm if it finishes prior to the sauce.
  • In the meantime, warm the olive oil in a saute pan until just warm and add pesto and heat on medium until it becomes more liquid.
  • Add cream and half and half and bring to a gentle boil while whisking. Continue to cook over low heat stirring frequently until thickened.
  • Add parmesan cheese and stir until melted.
  • Serve salmon on a bed of the sauce.

½ cup pesto sauce
2 sheets frozen puff pastry, thawed
9 oz salmon fillet
1 teaspoon salt
1 teaspoon pepper
5 leaves fresh basil, julienned
2 eggs, beaten

Steps:

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a small bowl lined with a strainer, strain the pesto. Set aside the pesto and pesto oil.
  • Gently unfold and unroll 1 sheet of puff pastry. Roll out to 11 inches (28 cm) by 16 inches (40 cm). Transfer the puff pastry to the baking sheet.
  • Spread half of the pesto onto the middle of the puff pastry in the shape of the salmon fillet. Place the salmon on top of the pesto. Season with salt and pepper. Spread more pesto on top of the salmon.
  • Place the other sheet of puff pastry on top of the salmon and press around the salmon fillet to seal. Cut a fish silhouette around the salmon and remove the excess puff pastry.
  • Unfold the head flap of the fish pastry. Brush pesto on the puff pastry and layer a small piece of puff pastry on top of the pesto. Repeat once more and refold the head flap.
  • Seal the edges by pressing onto the seams of the fish silhouette.
  • Use a knife to make indents for the head and fin details.
  • Use the tip of the spoon to create indents of the scales.
  • Brush the pastry with egg wash.
  • Bake for 40 minutes, or until golden brown.
  • In a small bowl combine the pesto oil and basil. Brush the pastry with the basil pesto oil.
  • Slice and serve while hot.

1 pound penne pasta
1 ½ pounds boneless, skinless salmon fillets
4 tablespoons salted butter
1 cup fresh asparagus tips
1 cup quartered artichoke hearts
½ cup chopped green onions
2 tablespoons minced garlic
¼ teaspoon salt
¼ teaspoon pepper
1 ½ cups heavy whipping cream
¼ cup pesto
1 ½ cups grated Parmesan cheese
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and rinse with cold water; set aside.
  • Meanwhile, cut salmon into small pieces.
  • Melt butter in a nonstick pan over medium heat. Add salmon and stir a few times. Add asparagus tips, artichoke hearts, green onions, garlic, salt, and pepper. Saute until salmon is almost cooked, garlic is golden, and asparagus is tender, about 5 minutes.

This is a really easy recipe to make it sounds like a lot of ingredients but they are just going in a blender so it does not take a really long time to prepare. This recipe could also be done on the BBQ cooking salmon as a whole rather than cutting it down into individual fillets.

4 -6 salmon fillets (This makes enough sauce for 6 servings.)
3/4 cup chopped of fresh mint, packed
3/4 cup freshly grated parmesan cheese
1/2 cup chopped fresh coriander, packed
8 garlic cloves, peeled
3 green onions, sliced
1/2 cup roughly chopped fresh basil
2 teaspoons chili sauce
1/2 cup olive oil, divided use
3 tablespoons lemon juice
1/2 cup white wine, divided use
pepper
1/2 cup whipping cream
1 teaspoon chicken stock
parmesan cheese, grated (extra for topping)

Steps:

  • In a food processor, add mint, Parmesan cheese, coriander, garlic, green onions, basil, chili sauce. Carefully pour 1/4 cup olive oil in while blending thoroughly, set to one aside.
  • In a large dish, combine 1/4 cup olive oil, lemon juice, 1/4 cup white wine and pepper. Add salmon and marinate 15 minutes.
  • Heat some oil in a pan and cook salmon until starts to flake 4-6 Min's a side depending on the thickness of the fillet. Or grill on the BBQ 12-15 Min's, again according to the weight you have bought.
  • While salmon is cooking. Combine in a saucepan, cream and 1/4-cup white wine and bring to a boil, reduce heat and simmer stirring a couple of minutes until reduced slightly, add chicken stock and stir to dissolve, add the garlic mixture, simmer a few more minutes, stirring to allow the potent flavour of the garlic to settle down.
  • To Serve: Arrange salmon on a plate pour sauce over and top with grated parmesan cheese. I served mine with wild rice and herbs, but serve with you favourite vegetables or salad whatever you prefer.

Linguine With Fresh Salmon and Pesto Sauce image

2 1/3 cups fresh basil leaves
1/2 cup plus 1 tablespoon extra-virgin olive oil
3 tablespoons pine nuts
1 tablespoon coarsely chopped garlic
Salt and freshly ground pepper to taste
1/2 cup grated Parmesan or pecorino cheese
1 1/4 pounds boneless, skinless salmon fillets
3/4 pound linguine
4 quarts water
1 teaspoon hot red pepper flakes
3 tablespoons finely chopped shallots

Steps:

  • Remove and discard all tough stems from the basil. Put 2 cups of the basil leaves in the container of a food processor. Add the 1/2 cup of oil, pine nuts, garlic, salt and pepper. Blend well to a fine texture. Add the cheese, and blend quickly.
  • Cut the salmon on the diagonal into 1-inch thick slices.
  • Lightly salt the water, and cook the linguine until al dente. Drain, but reserve 1/4 cup of the cooking liquid. Return the pasta to the pot in which it was cooked. Add half of the pesto sauce, the reserved cooking liquid, salt and pepper. Blend well, and keep warm.
  • Meanwhile, add the remaining 1 tablespoon of oil to a nonstick skillet large enough to hold the salmon in one layer. Add the salmon slices, and season with salt, pepper and pepper flakes. Cook, stirring about 1 minute. Add the shallots, cook and stir 1 minute more. Keep warm.
  • Divide the linguine equally on each of 4 serving plates. Spoon equal portions of the salmon mixture over each, and drizzle the remaining pesto sauce over all. Garnish with the remaining 1/3 cup basil leaves. Serve immediately.
