2 cups water
2 cups milk
1 teaspoon salt
1 cup quick-cooking grits
1/4 cup butter
1 cup shredded monterey jack pepper cheese
1 cup chunky salsa
sour cream
fresh diced tomato
finely chopped fresh cilantro

Steps:

  • Preheat oven to 350f and lightly grease a deep-dish pie plate.
  • Spread beans in the bottom of pie plate and set aside.
  • In a large saucepan, combine water, milk, and salt; bring to a boil over medium-high heat.
  • Stir in grits.
  • Reduce heat to low, cover and cook for 5 to 7 minutes, stirring occasionally.

4 tablespoons unsalted butter
3/4 cup shredded pepper jack cheese (about 3 ounces)
1 pound large shrimp, peeled and deveined
1/2 teaspoon cayenne pepper
2 stalks celery, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
4 scallions, thinly sliced (white and green parts separated)
1 tomato, chopped
Juice of 1/2 lemon

Steps:

  • Bring 4 cups water to a boil in a medium saucepan; add 1/2 teaspoon salt. Slowly whisk in the grits. Reduce the heat to a steady simmer and cook, whisking occasionally, until thickened, about 5 minutes. Whisk in 1 tablespoon butter and the cheese until melted. Season with salt.
