SALT-RUBBED SWEET POTATOES WITH SOUR CREAM AND CHIVES

Salt-Rubbed Sweet Potatoes With Sour Cream and Chives image

If you've ever thought the somewhat-dull sweet potato could use some punch, try covering it in a layer of salt before you bake it: The salt flavors and tenderizes the skin, leaving a crisp exterior that begs for the cooling tang of sour cream. Leave the potatoes a little damp after you've scrubbed them clean so that you'll have an easier time getting the salt to stick.

Time 1h

Yield 4 servings

Number Of Ingredients 5

4 medium sweet potatoes (8 to 10 ounces each), scrubbed and left damp
2 tablespoons kosher salt
1/4 cup sour cream
1/4 cup minced chives
Black pepper

Steps:

  • Heat the oven to 400 degrees. Line a sheet pan with parchment paper. Use a fork to poke holes all over the flesh of the damp potatoes, then rub each one all over with 1/2 tablespoon salt.
  • Bake for about 1 hour, until tender, then allow to cool slightly before brushing off excess salt and slicing each one lengthwise. Open up the sweet potato, use a fork to rough up its flesh, then dollop each with 1 tablespoon sour cream and sprinkle with 1 tablespoon chives. Garnish with black pepper.

BAKED SWEET POTATOES WITH CHARRED ONION RANCH DIP

Baked Sweet Potatoes with Charred Onion Ranch Dip image

Provided by Michael Symon : Food Network

Categories     side-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 16

4 sweet potatoes, about the same size
8 scallions, root end trimmed
2 cups sour cream
1/4 cup finely chopped fresh flat-leaf parsley
2 tablespoons Ranch Rub, recipe follows
1 teaspoon celery seeds
Kosher salt and freshly ground black pepper
1/2 cup buttermilk powder (found in the baking aisle)
1 tablespoon dried parsley
2 teaspoons dried chives
2 teaspoons dried dill
2 teaspoons garlic powder
1 teaspoon onion flakes
1 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Pierce the sweet potatoes multiple times with a paring knife or a fork. Place the potatoes along the outer edges of the indirect heat side of the grill. Cover the grill and bake until the potatoes are completely tender, about 1 hour. (If the potatoes are ready before you are ready to serve them, you can wrap them in aluminum foil and they will stay hot for up to 1 hour.)
  • Meanwhile, make the dip: Cook the scallions over direct heat, turning once, until charred on both sides, 2 to 3 minutes. When cool enough to handle, finely slice and add to a bowl. Mix in the sour cream, parsley, Ranch Rub and celery seeds. Set aside until ready to serve.
  • To serve: Split the sweet potatoes down the middle with a knife and spoon some of the ranch sour cream over, letting it melt down into the potato. Season with additional salt and pepper if desired.
  • (Alternatively, you can bake the potatoes in a 400 degrees F oven for 1 hour.)
  • Combine all the ingredients in a medium bowl and mix well. Makes about 3/4 cup.

SWEET POTATO HASH BROWNS

Sweet Potato Hash Browns image

A riff on Josh Ozersky's famous minimalist hash browns, these are made by sprinkling grated sweet potato over hot butter in a very thin layer, then waiting patiently for the starch to work its magic. Crisp, salty, buttery and addictive, these hash browns are so good, you could probably eat the entire batch in one sitting (or force yourself to be generous and share with a friend). Serve with a fried or over-easy egg for a complete breakfast.

Time 20m

Yield 2 servings

Number Of Ingredients 4

1 large sweet potato (10 to 12 ounces), scrubbed and dried
2 tablespoons cornstarch
2 tablespoons unsalted butter
Kosher salt

Steps:

  • Using the large holes of a box grater, grate the sweet potato onto a paper towel. Use the paper towel to gather the sweet potato shreds, then squeeze to wring out excess moisture (there may not be much). Dump into a bowl, add cornstarch and mix to combine.
  • Set your largest nonstick skillet (cast-iron is also fine, if it's all you have, though you can expect a bit more sticking) over medium-high heat and add 1/2 tablespoon butter. Swirl the pan to coat it in butter. When the butter stops foaming, sprinkle shredded sweet potato all over the surface in a thin single layer. (The thinner the layer, the more crisp the hash browns.)
  • Sprinkle all over with salt, then use a spatula, preferably long and thin, to press down so all shreds come in contact with the hot surface. When you see the potato is starting to get really crisp and brown on the bottom, about 3 to 4 minutes, use the spatula to carefully flip small sections over (it's O.K. if it's not perfect). Cook until the other side is deeply brown, 3 to 5 minutes more, flipping sections as needed.
  • Unless your pan is really big, you'll have to cook these in 3 to 4 batches, using 1/2 tablespoon butter for each round. You can keep the cooked hash browns warm in a 300-degree oven as you work.

Tips:

  • Choose sweet potatoes that are about the same size so that they cook evenly.
  • Prick the sweet potatoes all over with a fork before baking. This will help them cook faster and more evenly.
  • Rub the sweet potatoes with olive oil and sprinkle them with salt before baking. This will help them crisp up and develop a delicious golden brown color.
  • Bake the sweet potatoes at a high temperature (400 degrees Fahrenheit or 200 degrees Celsius) for about 45 minutes, or until they are tender when pierced with a fork.
  • Let the sweet potatoes cool slightly before serving. This will make them easier to handle and will help prevent the sour cream and chives from sliding off.
  • Top the sweet potatoes with sour cream, chives, and any other desired toppings before serving.

Conclusion:

Salt-rubbed sweet potatoes with sour cream and chives are a delicious and easy-to-make side dish that is perfect for any occasion. They are simple to prepare, can be made ahead of time, and are always a hit with guests. The sweet potatoes are tender and flavorful, the sour cream is tangy and creamy, and the chives add a fresh, herbaceous flavor. This dish is sure to become a favorite in your household.
