SARAH'S OVEN BAKED CHICKEN
This is how my husband and I make simple chicken, though it's best with fresh chicken but frozen chicken, when thawed, works just as well. We use soy sause as a base for the spices and brush it on with a pastry brush, but you can use a bag if you need to.

- Preheat oven to 375 degrees F& spray either a broiler pan, cookie sheet with sides, or a shallow casaroll dish.

- You can place all the ingrediants in a bag and shake them together, or mix them with some water or soy sauce to brush onto the chicken.

Steps:
- Preheat the oven to 450 degrees F. Make the sweet-and-sour sauce: Whisk the ketchup, marmalade, soy sauce, vinegar, ginger and cayenne in a small bowl. Put the bell peppers and scallions on a rimmed baking sheet and toss with 2 tablespoons of the prepared sauce, 1 1/2 teaspoons olive oil and a pinch of salt.
- Heat the remaining 1 1/2 teaspoons olive oil in a large skillet over medium-high heat. Sprinkle the chicken with 1/2 teaspoon salt. Working in batches, add the chicken to the skillet skin-side down and cook, undisturbed, until the skin is golden and slightly crisp, about 4 minutes. Place skin-side up on the baking sheet with the vegetables.
- Brush the chicken with half of the remaining sweet-and-sour sauce. Bake until a thermometer inserted into the thickest part registers 165 degrees F, 20 to 25 minutes. Divide the chicken and vegetables among plates. Serve with rice and the remaining sauce.

OVEN-BAKED CHICKEN AND VEGETABLES IN FOIL
To make your evening meal go faster, prep these chicken and vegetable packets early in the day and refrigerate until it's time to pop in the oven. This cooking time will yield nicely done chicken and vegetables with a little texture. If you prefer your vegetables softer, use boneless, skinless chicken thighs, and cook about 15 minutes longer. For the summer, this recipe will also adapt to the grill-just be sure to use a grill thermostat for best results.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Cut an 18-inch wide roll of heavy-duty aluminum foil into six 12-inch long pieces.
- Slice each chicken breast in half lengthwise, so the thickest part is about 1/2 inch thick and season with salt and pepper to taste. Set each seasoned chicken breast onto a single piece of aluminum foil.
- Combine olive oil, garlic, salt, and pepper in a large bowl. Add sliced carrots, parsnip, red bell peppers, and mushrooms. Stir to combine vegetables with the seasoned oil. Set an even amount of vegetables on top of each piece of chicken.
- Top vegetables with a whole slice of red onion and place a sprig of fresh rosemary on top of the onion.
- Fold aluminum like a book cover over the top of each serving and crimp the edges all around tightly together.
- Place foil packets with the chicken on the bottom onto a 12x18-inch rimmed baking sheet.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. Watch out for any steam when you check the chicken for doneness. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Remove foil packets from the oven, open the packets, and serve immediately.

SARAH'S SUPER FAST CHICKEN PARMESAN
This may not be the authentic way of cooking this dish but it is comfort food for me and it is quick and easy. My (soon to be) British mother in law loves this dish and requests it every time she comes to stay with us. I even like this leftover the next day and used to make a naughty but nice sandwich.

Tips:
- Brine the chicken: Brining the chicken breasts in a mixture of water, salt, and sugar helps to keep them moist and flavorful. You can brine the chicken for as little as 30 minutes or up to overnight.
- Use a flavorful marinade: The marinade adds flavor to the chicken and helps to keep it moist. There are many different marinade recipes to choose from, so find one that you like and experiment with different flavors.
- Cook the chicken to the right temperature: The internal temperature of the chicken should reach 165 degrees Fahrenheit when cooked. You can check the temperature with a meat thermometer.
- Let the chicken rest before serving: Let the chicken rest for a few minutes before serving to allow the juices to redistribute. This will help to keep the chicken moist and flavorful.
Conclusion:
Baked chicken is a versatile and delicious dish that can be enjoyed by people of all ages. It is a healthy and affordable meal that can be prepared in a variety of ways. With a little planning and effort, you can make a delicious baked chicken dish that your family and friends will love.
