SAUERKRAUT CASSEROLE
Mom brewed her own sauerkraut and, of course, the cabbage was from our big farm garden! Blending the kraut with spicy sausage and apples was Mom's favorite way to fix it, and I still love this country dish. -Rosemary Pryor, Pasadena, Maryland

POLISH SAUSAGE AND SAUERKRAUT CASSEROLE (KAPUSTA)
When my husband's Grandmother died, I was the designated person to bring this to all holiday dinners (even though I'm Irish!) since I learned what to do by watching her. She always used fresh rather than smoked Polish Sausage.

Steps:
- Preheat oven to 325 degrees Fahrenheit.
- Bring sausage to boil and simmer 15 minutes; drain and set aside.
- Cut bacon into small pieces.
- Begin browning, then add diced onion.
- Saute together until bacon is almost crisp.
- Drain mixture, reserving bacon grease.
- Drain sauerkraut (do not rinse).
- Add sauerkraut and brown sugar to bacon mixture.
- Mix in about 2 Tablespoons reserved bacon grease and water.
- Place in large casserole dish.
- Cut Polish sausage into 3" pieces and place on top of sauerkraut.
- Cover and bake at 325 degrees Fahrenheit for 1 hour 15 minutes, checking sauerkraut mixture halfway through to add more water if sauerkraut appears very dry.
- Finish baking; remove from oven.
- Taste sauerkraut and, if desired, adjust flavor by adding salt and pepper, or a little more brown sugar, vinegar or bacon grease to your taste. (Note: In the old days, Busia (Grandma) would soak a cup of yellow peas overnight to soften them and would mix them into the sauerkraut. It was probably to stretch the quantity, but I don't do it anymore!).

Steps:
- Preheat oven to 350°. I put mine in the crockpot.
- Drain and rinse sauerkraut in a colander.
- Mix with all the ingredients in a bowl and pour into large casserole dish (or put in crockpot) Cover and bake for 1 1/4 to 1 1/2 hours.
- Or let cook in crockpot on low for several hours until potatoes are tender. I usually add 1 can of water and mix well. Add more water accordingly throughout the day.
- I let mine cook all day on low.
- You can also try substituting the brown sugar with applesauce and apple chunks (1/2 cup each) for color and texture.
- I also use the Bavarian kraut--this gives this dish a sweeter flavor--even my kids like it.
HOTDOGS AND SAUERKRAUT CASSEROLE
This IS my favorite meal! I love this! My mother would make this and so this is her version. I know others would add all kinds of things to this casserole but my mother made simple meals for seven and so I also like it simple as well as I like the dogs to soak up the kraut taste. I always eat this with boiled potatoes, green...

Steps:
- 1. Place half of the saurkraut with juice in a baking dish. Add hotdogs, as many as you will feed, on top of sauerkraut. No need to grease pan.
- 2. Add second half of sauerkraut with juice on top of placed hotdogs. Baking dish size depends on how many people you are serving and dogs being used. If 6-8 dogs, use a 13x9. Make sure to have enough kraut to cover. Use a smaller baking dish if only making for one or two.
- 3. Bake at 350 degrees for 35-40 mins. I like to see little tinges of browning on the tops of the sauerkraut. If the dogs split open a little, no worries.
- 4. I do highly recomend pairing this with boiled potaoes with butter on top, green beans and applesauce as they just go so well together! You will not believe the flavor of the hotdogs! Sometimes I will put a little mustard on the hotdogs.
- 5. You can also use sausages instead of hotdogs. You can also put the dogs and the kraut in a bun with mustard on top and it is delicous with frys also. The flavor of the dog cooked in the kraut juice...its just to die for, if you love sauerkraut as I do!

Steps:
- 1. Grease the inside of a 2-1/2 to 3-quart casserole baking dish; set baking dish aside.
- 2. Cook egg noodles as per directions on package; set aside.
- 3. Cut Kielbasa or smoked sausage into chunks, then cut each chunk in half; set aside.
- 4. Melt the 1/3 cup of butter in a large saucepan. (I used a 3-quart saucepan).
- 5. Stir in the flour, garlic power, onion powder, pepper, and mustard.
- 6. When mixture is well combined, gradually add the milk. Bring mixture to a boil for 1 minute; stirring constantly until the sauce has thicken. (Mine started to thicken in less than a minute.)
- 7. Add the cup of cheese to the pan, stir until melted.
- 8. Add the Kielbasa or smoked sausage, plus the drained sauerkraut to the pan, and stir.
- 9. Pour mixture into the greased baking dish, then stir in the precooked noodles.
- 10. Top the casserole with a mixture of 4 tablespoons of bread crumbs mixed with 2 tablespoons of melted butter.
- 11. Bake casserole (uncovered) for 25 minutes in a 375º oven.
- 12. Note: When preparing this casserole, you can use a Bavarian Sauerkraut in place of regular sauerkraut. Plus the original recipe states to use 2 cups of the kraut, but I just use 1-1/2 cups. Also, you can use smoked sausage in place of the Kielbasa. I used smoked sausage, and the brand of sausage I used was, Eckrich.
Tips:
- Use a variety of sauerkraut. Try different brands and types to find one that you like. You can also use a combination of sauerkraut and other fermented vegetables, such as kimchi or kombucha.
- Rinse the sauerkraut before using it. This will help to remove any excess salt or vinegar.
- Sauerkraut casserole is a versatile dish. You can add a variety of ingredients to it, such as meat, vegetables, cheese, or herbs.
- Cook the sauerkraut casserole until the sauerkraut is tender and the casserole is bubbly. This usually takes about 30 minutes.
- Serve the sauerkraut casserole hot with a side of bread or mashed potatoes.
Conclusion:
Sauerkraut casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover sauerkraut. With its tangy flavor and hearty texture, sauerkraut casserole is sure to be a hit with your family and friends.
