Number Of Ingredients 5

5 pounds cabbage, thinly sliced
1 onion, thinly sliced
3 tablespoons sea salt
3 cloves garlic, minced, or more to taste
water to cover

Steps:

  • Mix cabbage, onion, sea salt, and garlic together in a bowl. Firmly pack mixture into a large, clean, food-grade plastic bucket. The cabbage will start to make its own brine as the salt starts to draw out the water of the cabbage.
  • Fill a large, clean, food-grade plastic bag with water and place over the salted cabbage mixture so none of the cabbage is exposed to air.
  • Allow cabbage to ferment in a cool, dry place, 1 to 4 weeks (depending on how tangy you like your sauerkraut). The temperature of the room you ferment the sauerkraut in should not rise above 70 degrees F (21 degrees C).

Tips:

  • Prepare your sauerkraut in advance: To achieve the best flavor and texture, soak your sauerkraut in cold water overnight before using it on your pizza.
  • Use a variety of toppings: Don't limit yourself to just sauerkraut and cheese. Experiment with different toppings like bacon, onions, mushrooms, peppers, and sausage to create a unique and flavorful pizza.
  • Go easy on the cheese: While cheese is a delicious addition to any pizza, it's important not to overdo it. Too much cheese can overpower the other flavors on your pizza and make it greasy.
  • Bake your pizza at a high temperature: A high temperature will help to create a crispy crust and prevent the pizza from becoming soggy.
  • Let your pizza cool for a few minutes before slicing: This will help to prevent the toppings from sliding off the pizza.

Conclusion:

Sauerkraut pizza is a delicious and unique way to enjoy this fermented cabbage. With its tangy flavor and crispy crust, sauerkraut pizza is sure to be a hit with your family and friends. So next time you're looking for a new pizza recipe to try, give sauerkraut pizza a try. You won't be disappointed!
