Time 45m

Yield 4 servings

Number Of Ingredients 11

1 cup couscous
2 bell peppers (red and yellow), cut into chunks
1 (12-ounce) package chicken sausage (preferably garlic-flavored), cut into 1-inch pieces
1 large red onion, cut into chunks
1 cup cherry tomatoes
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1/4 cup fresh parsley
1/4 cup fresh cilantro
4 scallions, roughly chopped
1 tablespoon white wine vinegar

Steps:

  • Soak eight 8-inch skewers in water, at least 15 minutes. Preheat a grill or grill pan to medium high. Prepare the couscous as the label directs.
  • Meanwhile, toss the bell peppers, sausage, onion and tomatoes in a bowl with 1 tablespoon olive oil; season with salt and pepper. Thread onto the skewers, alternating the sausage and vegetables. Grill, turning, until the vegetables are slightly softened and the sausage begins to brown, 6 to 7 minutes.
  • Meanwhile, puree the parsley, cilantro and scallions in a blender with the remaining 2 tablespoons olive oil, the vinegar and 2 tablespoons water. Season with salt and pepper. Brush the skewers with some of the pesto and continue to cook, turning, until the tomatoes are tender and the sausage is charred, 6 to 7 more minutes.
  • Toss the couscous with half of the remaining pesto and season with salt and pepper. Serve with the skewers and the remaining pesto, for dipping.

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 7

4 (12-inch) bamboo skewers soaked in water for 1 hour
6 slices center cut bacon, cut into 1-inch pieces (recommended: Oscar Mayer)
4 chicken and apple sausages (recommended: Aidell's)
1/2 red onion, cut into 1-inch pieces
1 green, red, or yellow bell pepper, cut into 1 1/2-inch pieces
1 cup store bought BBQ sauce
1 orange, cut into slices or wedges

  • Cut each sausage into 5 pieces.
  • Thread an end piece of sausage onto skewer followed by a piece of bacon, onion, bell pepper, and another piece of bacon. Repeat using center sausage pieces and finishing with end piece (center sausage pieces will be "sandwiched" between bacon). Repeat with remaining skewers and sausages.
  • Place skewers on hot oiled grill and cook 4 to 5 minutes per side (16 to 20 minutes total).
  • Meanwhile, squeeze the orange juice into the BBQ sauce and stir to combine. Brush kabobs with BBQ sauce with each turn. Serve hot with orange slices or wedges.
  • INDOOR: Prepare kebabs as directed. Preheat broiler. Place kebabs on wire rack over foil lined baking sheet or broiler pan. Place under broiler 4 to 6 inches from heat source and cook 3 to 5 minutes per side. Brush with BBQ sauce with each turn.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 7

1 -2 lb sausage (about 8 links, we prefer sweet, you may use hot)
1 large sweet onion, sliced and chopped
1 large red pepper, sliced and chopped (or any other sweet pepper)
olive oil
salt
pepper
1 loaf Italian bread

Steps:

  • Heat approximately 1 tablespoon of olive oil in a large frying pan.
  • Brown the sausage in the oil until you get a nice color on the outside and you no longer see any"pink".

  • Keep the heat going on the pan and add onions and peppers (do not add any additional oil).
  • Cook the onions and peppers approximately 5 minutes or until onions start to become translucent.
  • During this time, slice the sausage down the middle, do not cut all the way through, just enough so you can open the sausage and"fan" them out.

Tips:

  • Choose the right sausage: Italian sausage, bratwurst, or chorizo are all great options for kebabs. Look for sausages that are fully cooked or pre-cooked, as this will save you time when grilling.
  • Use a variety of bell peppers: Different colors of bell peppers will add a pop of color and flavor to your kebabs. Red, orange, yellow, and green bell peppers are all good choices.
  • Add other vegetables: In addition to bell peppers, you can also add other vegetables to your kebabs, such as onions, mushrooms, zucchini, or tomatoes. Just be sure to cut the vegetables into uniform sizes so that they cook evenly.
  • Marinate the kebabs: Marinating the kebabs in a flavorful marinade will help to keep them moist and juicy. You can use a simple marinade made with olive oil, garlic, herbs, and spices, or you can try a more complex marinade, such as a yogurt-based marinade or a balsamic vinegar-based marinade.
  • Grill the kebabs over medium heat: This will help to prevent the kebabs from burning. Cook the kebabs for about 10-12 minutes, or until the sausage is cooked through and the vegetables are tender.
  • Serve the kebabs with your favorite dipping sauce: A simple tzatziki sauce, a spicy harissa sauce, or a creamy ranch dressing are all great options.

Conclusion:

Sausage and bell pepper kebabs are a delicious and easy-to-make meal that is perfect for a summer cookout or party. With a few simple tips, you can make sure that your kebabs are cooked to perfection and full of flavor. So fire up the grill and get ready to enjoy this tasty dish!
