HEARTY SAUSAGE, BEAN AND RED WINE CASSEROLE



Hearty Sausage, Bean and Red Wine Casserole image

A good wholesome and hearty dish that is so easy to throw together. Serve with some creamy mashed potatoes or try it with my recipe #292165 for a real winter warmer of a meal.

Number Of Ingredients 10

1 tablespoon sunflower oil
8 pork and herb sausages
1 sliced onion
2 sliced celery ribs
2 sprigs fresh thyme
2 tablespoons tomato puree
1 tablespoon flour
150 ml red wine
600 ml chicken stock or 600 ml vegetable stock
410 g haricot beans or 410 g cannellini beans, drained and rinsed

Steps:

  • Heat the oil in a casserole dish. Add the sausage and brown. Remove the sausage and set to one side. Add the onion, celery and thyme and cook for 5 minutes.
  • Add the tomato puree and flour and cook for approx 1 minute.
  • Pour in the wine, bring to the boil and bubble to reduce it by about 2/3rds. Add the stock and bring back to the boil, then reduce the heat to a simmer.
  • Halve the sausages diagonally and return them to the pan. Simmer for 15 minutes until the sausage cooks through and the sauce thickens.
  • Stir in the beans and cook for a further 5-10 minutes to heat them through; season to taste.

1 small head red cabbage, shredded
1 apple, cored and diced
3 teaspoons salt, divided
1 tablespoon lemon juice
½ cup water
1 tablespoon butter
1 small onion, chopped
⅛ teaspoon ground black pepper
1 tablespoon wine vinegar
1 pound kielbasa sausage, cut into 1 inch pieces

Steps:

  • Place the cabbage in a large kettle, and add the diced apple, 2 teaspoons of the salt, lemon juice, and 1/2 cup water. Bring to a boil then simmer, covered, about 15 minutes stirring occasionally.
  • In hot butter, saute the onion until golden. Add the onion to the cabbage along with 1 teaspoon salt, pepper, vinegar and sausage. Cook, covered, 20 to 30 minutes until sausage is heated through. To serve, spoon the cabbage onto a heated platter, topping it with the sausage.

Sausages With Mushrooms And Red Wine image

1 ounce dried porcini mushrooms
8 pork sausages (Italian, sweet or country)
1 tablespoon safflower oil
1 large onion, chopped
1 clove garlic, minced
4 tablespoons butter
1 tablespoon flour
1/2 cup pureed canned tomatoes
1/2 cup dry red wine
1 cup chicken stock
Coarse salt and freshly ground pepper to taste
1 pound mushrooms (a mixture of cultivated plus wild, such as black chanterelles and wild oak, if possible)

Steps:

  • Soak the porcini mushrooms in warm water to cover for at least 15 minutes. Meanwhile, prick the sausages all over with a fork and cook them in a large skillet in the oil until well-browned on all sides. Drain on paper towels when done.
  • In a heavy casserole, saute the onion and the garlic in two tablespoons of butter until soft. Sprinkle on the flour and cook for a minute, stirring, without burning.
  • Add the tomatoes, wine and chicken stock. Season to taste, cover and simmer for 15 minutes. Add the sausages and simmer another 15 minutes, or until you are sure they are cooked.
  • Slice the mushrooms and saute them in the remaining butter in a separate skillet. Season with salt and pepper and add to the sausages. Cook, uncovered, over low heat for 10 minutes, stirring occasionally. Correct seasonings and serve.

1 pound sage flavored breakfast sausage
3 cups shredded potatoes, drained and pressed
¼ cup butter, melted
12 ounces mild Cheddar cheese, shredded
½ cup onion, shredded
1 (16 ounce) container small curd cottage cheese
6 jumbo eggs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
  • Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

This comes from cookitsimply.com. The sauce is absolutely gorgeous! I added a dash of lemon juice before cooking this in a tagine, in the oven (2+ hours @ 325f) - perfect! The recipe says to cook it in a pan on the hob so feel free to do it that way!

4 ounces bacon, diced
1 ounce butter (50 g)
4 pigeons or 2 wood pigeons
4 medium onions, skinned and chopped
4 medium carrots, peeled and chopped
1 bay leaf
2 teaspoons chopped fresh parsley
1/4 teaspoon dried thyme
salt & freshly ground black pepper
1 ounce flour
300 ml meat stock
100 ml red wine

Steps:

  • Fry the diced bacon for 2 minutes, add the butter (I used 1oz of butter and a dash of olive oil) and the pigeons and brown quickly on all sides.
  • Remove and add the chopped vegetables, herbs, salt, freshly ground pepper and flour. Mix well.
  • Replace the birds, pour on the stock and the wine, bring to the boil and simmer very gently for 1 1/2 hours, until the birds are tender.
  • Serve with red currant jelly.

2 ounces dried porcini mushrooms
8 Italian sausages
1 large onion chopped
2 cloves garlic, minced
3 tablespoons olive oil
1 tablespoon fresh rosemary or thyme leaves
1 cup canned Italian tomatoes, chopped
1 cup dry red wine
1 pound mushrooms
Coarse salt and freshly ground pepper to taste
13 ounces of polenta cooked according to directions on the package

Steps:

  • Insert the porcini mushrooms in water to cover for at least 15 minutes. Meanwhile, prick the sausages all over with a fork and brown them under a broiler or cook them in a quarter-inch of water in a large skillet until they are well brown. Drain on paper towels when done.
  • In a heavy casserole, saute the onion and garlic in two tablespoons olive oil with the rosemary or thyme until soft. Add the tomatoes and wine, season to taste, cover and simmer for 15 minutes.
  • Meanwhile, slice the mushrooms and saute them in the remaining olive oil in a separate skillet. Season with salt and pepper and add to the tomato sauce with the sausages. Cook, uncovered, over low heat for about 10 minutes, stirring occasionally. Place the polenta on a serving dish and spoon the sauce and the sausages over the top.

Tomato based sausage casserole, a healthy(ish!) cheap family meal.

Steps:

  • Gently fry the sausage in a large pan (a wok is good) in the olive oil until cooked through and golden brown.
  • Remove sausage and keep to one side. Now, in the same pan fry the onions and garlic untill softened. After 5 mins or so add the peppers, mushrooms and sundried tomatoes, cook for a further few mins then return the sausages to the pan.
  • turn the heat up high, add the red wine and cook for a few mins to reduce slightly.
  • Add the passata, sugar, basil and paprika and simmer for half an hour. (or as long as you want really the longer its left the better the taste its amazing reheated the next day!)
  • Season to taste if liked and serve with fluffy rice, crusty bread or with pasta. Try with any other veg in you like.
