I was searching for a quick and easy breakfast for a group of picky youngsters and came up with my own super easy breakfast sausage loaf from ingredients normally found in any fridge. This can be as basic as dinner rolls/sausage/eggs/cheese...or jazz it up a bit with onions and green peppers. This can be put together the night before, frozen or made on the fly.

1 pound bulk pork sausage
¼ cup brown sugar
1 tablespoon butter
4 large eggs large eggs
2 tablespoons milk
1 pinch salt and ground black pepper to taste
1 (8 ounce) package refrigerated crescent rolls
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Heat a large skillet over medium-high heat and stir in the sausage and brown sugar. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Transfer sausage to a bowl; wipe the skillet clean.
  • Melt the butter in the clean skillet over low heat. In a bowl, whisk together the eggs, milk, salt, and black pepper. Pour the eggs into the skillet. 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

4 pecan halves
5 bay leaves
85 g butter
1 tablespoon olive oil
2 onions, chopped
1 teaspoon ground coriander
50 g pecans, chopped
100 g fresh white breadcrumbs
140 g pork sausage (or skinned sausages)
75 g ready-to-eat dried apricots
25 g dried cranberries or 25 g craisins
1 small orange, finely grated zest only
4 -6 sage leaves, finely chopped
1 large egg, beaten

Steps:

  • For the topping: butter a 1kg (2 lb) loaf tin and line the base with greaseproof paper. Lay the four pecan halves and the bay leaves alternately in a line along the bottom of the tin. Preheat the oven to 190C/375F/gas 5.
  • For the stuffing: heat 50g of the butter for the stuffing in a large frying pan with the oil until the butter has melted. Add the onions and fry for 8-10 minutes until softened and starting to turn golden, stirring occasionally. Stir in the ground coriander and the rest of the butter and fry for another 3-4 minutes to soften and to caramelise the onions a bit more. Tip in the nuts and stir them around until they start to look toasty.
  • Remove the pan from the heat and mix in the breadcrumbs, sausage meat, apricots, cranberries, orange zest, sage leaves, egg and some salt and pepper to season. When combined, spoon the stuffing into the tin and pack it down lightly. Cover with a piece of buttered greaseproof paper.
  • Bake for 30 minutes, then remove the paper and bake for another 5 to 10 minutes. Remove from the oven and leave to stand for a few minutes.
  • Discard the paper, loosen the sides with a round-bladed knife and turn out the stuffing so the pecans and bay leaves are on the top. Slice to serve.

1 tube of hot sausage
half bell pepper
half onion
1 egg
1/2 cup milk
1 frozen loaf of garlic brand(Coles my favorite)
mozzarella/cheddar cheese 3 cups assorted

Steps:

  • Thaw garlic bread, spoon out center of garlic loaf place in bowl, add egg and milk. Brown sausage and pepper and onion until brown do not drain grease. Pour into bread mixture. mix until all ingredients are well mixed. Pour in garlic loaf and add cheese to top. Bake at 400 until cheese melted.

1 (1-pound) loaf French bread
1/2 pound ground beef
1/2 pound bulk pork sausage
1 medium onion, chopped
1 cup (4 ounces) part-skim mozzarella cheese, shredded
1 egg, beaten
1/4 cup fresh parsley, chopped
1 teaspoon Dijon mustard
1/4 teaspoon pepper
1/4 teaspoon salt
1/8 teaspoon fennel seed
2 tablespoons butter
1 garlic clove, minced

Steps:

  • Cut a thin slice off the top of the bread. Hollow out bottom half, leaving a 1/4-inch shell. In a food processor or blender, process bread crumbs until coarse; set aside 1 cup. (Discard remaining crumbs or save for another use.) In a skillet, brown beef, sausage and onion; drain. Stir in reserved crumbs, cheese, egg, parsley, mustard, pepper, salt and fennel; mix well. Spoon into bread shell; replace bred top. Place on a large sheet of heavy-duty foil. In a small saucepan, melt butter; add garlic and cook for 1 minute. Brush over tops and sides of loaf. Seal the foil. Bake at 400° for 20 minutes or until cheese is melted.
