1/2 teaspoon dried oregano

16 ounce can diced tomatoes (with liquid)
1-1/2 cups assorted Greek or Spanish olives
1/2 cup diced roasted red bell pepper (about one whole one)
1/3 cup roasted garlic cloves
2 tablespoons chopped Italian parsley
1 pound large shrimp (peeled and deveined)
8 ounces cubed feta cheese

Steps:

  • Preheat oven to 450F.
  • Saute the onion and garlic in olive oil in a large oven-safe pan or skillet.

1/4 cup finely minced fresh flat-leaf parsley
1 tablespoon finely minced fresh dill
1 1/4 pounds medium shrimp, peeled and deveined
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2/3 cup crumbled feta cheese (about 3 ounces)

3 cups zucchini, sliced
