Categories     side-dish

Time 20m

Yield 4 servings

Number Of Ingredients 6

4 to 5 tablespoons extra-virgin olive oil
8 large cloves garlic, very thinly sliced
Kosher salt
4 ounces pancetta, cubed
3/4 pound spinach leaves
1 tablespoon apple cider vinegar

Steps:

  • Gently heat the olive oil in a small skillet over medium-low heat and add the garlic slices. Cook, stirring with a slotted spoon so the garlic slices gently cook and become crispy, and remove them as they brown. Drain on a kitchen towel and sprinkle with salt.
  • Heat a couple of spoonfuls of the oil from the garlic in a large skillet over medium heat and add the pancetta. Cook until the pancetta becomes crispy, then remove with a slotted spoon and set aside. Add the spinach to the same skillet and season with salt. Toss lightly so the spinach gets coated with the oil and wilts slightly, about 1 minute. (The spinach should only be partially wilted and still appear somewhat raw.)
  • Pour off any water that might accumulate in the bottom of the skillet and stir in the vinegar and pancetta. Transfer to a serving bowl and top with the garlic chips. Serve immediately.

Tips:

  • Choose fresh, tender spinach: Look for spinach leaves that are deep green in color and have no signs of wilting or yellowing.
  • Wash the spinach thoroughly: Before cooking, rinse the spinach leaves in cold water to remove any dirt or grit.
  • Don't overcook the spinach: Sautéing the spinach for just a few minutes will help it retain its bright green color and nutrients.
  • Use good quality pancetta: Pancetta is an Italian cured meat that adds a salty, savory flavor to the dish. Look for pancetta that is dry-cured and has a deep red color.
  • Add some garlic and shallots: Garlic and shallots add a delicious aromatic flavor to the dish. Sauté them in the olive oil before adding the spinach and pancetta.
  • Season the spinach to taste: Add salt, pepper, and red pepper flakes to taste. You can also add a squeeze of lemon juice or a splash of white wine for a bit of acidity.

Conclusion:

Sautéed spinach with pancetta is a quick and easy side dish that is perfect for any occasion. It is healthy, delicious, and can be served with a variety of main courses. So next time you are looking for a simple but flavorful side dish, give sautéed spinach with pancetta a try. You won't be disappointed!
